There were only three people in our class of tamale making. Marilau is a wonderful teacher who is extremely knowledgeable of traditional Mexican cooking. She knows the history of the Mexican cooking from all parts of Mexico and shares this knowledge as she explains the methods of preparing the food. It is a very hands on class with prepared recipes to keep and practice at home.

I traveled to San Miguel de Allende by myself. The only activity I scheduled ahead of time was a cooking class with Marilau. She signed me up for the class that was available when I first wrote. But when the mole class came available, she switched me to it as that was my true interest. Marilau is a fantastic teacher. And her passion for authentic Mexican cuisine shines through at all times. In addition to mole, we learned to make proper Mexican rice. The class would be have been worthwhile to just learn the rice technique, which I look forward to trying as soon as I get home. Thank you Marilau, Claudia, and Andrea for a special experience. I will definitely take another class should I return to SMA.

The experience with only 12 people in Marilau's home cooking school was the best - food was delicious. Made my trip to San Miguel so memorable. Can't wait to go back for more lessons.

MARILAU;Mexican Ancestry Cooking experience was beyond anything we could have expected. Every detail of the day was beautifully crafted, from the kitchen itself to the delicious meal that was prepared. Chef Marilau was extremely knowledgeable (Marilau taught us things which a seasoned chef would know chemical reactions and important details to bring out flavor). Her hospitality made us feel right at home. The day was even more special because It was Dia de los Muertos, and we were in full Costume; So much fun. We could not have asked for a more memorable experience. Nancy and I highly recommend to visit San Miguel de Allende and to have a cooking class with Marilau. Thanks Marilau Mario M

Many years ago, I lived in southern Mexico and loved it. However, there were dishes that I did not learn to cook as they seemed, at that time, too difficult/ time consuming to make at home. Besides I could readily buy them. In July, I decided to take a 4-day course with Marilau, to specifically to make mole, pipian and two types of tamales - wrapped in corn and banana leaf. I so enjoyed her classes as she shared her love and knowledge of the history, regional differences and the flavors of Mexico. She is an inspiration to keeping traditional cooking and recipes alive – a wonderful and refreshing outlook specially when everything today (especially food) is all about speed. This has increased my appreciation of the depth/complexity of flavors and the art of Mexican cuisine. I am looking forward to returning to take more classes from Marilau.
