Kirsten's class in the basics of Mexican Cooking is more fun than you can shake a rattle at! The history of corn, peppers, and more is stirred right into the basic ingredients of tortillas and salsas. And you get to eat what you learn about. If you plan a visit to San Miguel Allende, make sure you plan for a class with Kirsten.

Kirsten presented the class clearly, combining history of the indigenous foods of Mexico with simple to prepare recipes. She has a vast knowledge of Mexican cooking and is extremely enthusiastic. While the class was mainly demo, the hands-on portion (making tortillas) was great fun. It made me want to go purchase a tortilla press! She included suggestions of alternative uses for salsas, beyond as a dip for chips. I can't wait to try some of the recipes she gave us.

This is the perfect class for those who like to know the origins of Mexican cuisine. Chef Kirsten West is a wealth of information and stories. Every ingredient in her kitchen is totally of Mexican origin. She has cooked with best and has much to share. My visiting friend and I shared the experience with a couple visiting San Miguel for the first time. It was a very enjoyable afternoon. She demonstrated most dishes except corn tortillas which we made with the tortilla presses. We left with some very doable recipes. The setting is very pleasant. This is not a hands on course but more of informed, interesting storytelling by a knowledgable chef over a great lunch.

Kirsten West is an amazing cook and teacher that blends indigenous ingredients with Mexican foods and makes it look easy. I was fortunate to attend her over 4 hour class and eat some of the best Mexican food I have ever had. Kirsten, from Bavaria, has lived in Mexico for over 25 years and understands the local cuisine. We made corn tortilla stuffed with mushrooms, cheese and a local herb—so delicious. I learned how to peel ancho chilies and stuf them with an amazing salsa/potato mixture. The best part is I have recipes to take home. Taking a cooking class from Kirsten was a highlight on my month stay in San Miguel—she makes cooking look easy and taste delicious.

Kirsten has such a fabulous time leading this class that her enthusiasm bubbles over to all the participants..even men!! She is extremely knowledgeable of the mexican food history and heritage and loves to impart that to her participants. I think they enjoy making the tortillas the most! One man in our group went to the local market afterwards and bought a tortilla press to take back, and my own husband even asked me if we needed one!! The gals all appreciate getting a cookbook of what we have just made and eaten! This is always a highlight of any trip to San Miguel! Kirsten is magical!! I bring small groups to Mexico and always include a class here! This includes lunch and runs from about 10am-230pm
