I encourage you to talk to the people who run the Adventure Tour Center. They are very nice and can get more into the specifics. I also had some limitations due to a foot problem when I joined them on a three cenotes tour. There was never much walking, but entry/exit into the water could be challenging. Alex our guide was super supportive and helpful, showing me the easiest spots and jumping in or out to assist me. However I did sit out the last cenote, since after jumping in the exit was a rough ladder. I possibly could have done it if I had remembered to bring my water shoes - I was kicking myself. However I did as much as I felt able to, felt totally comfortable, safe, and encouraged by our guide, and consider the tour one of the highlights of our stay.
