We stayed at the Barcelo resort and they have a dolphin aquarium at the resort. That might be a easy way to have a dolphin encounter. I would highly recommend the resort too!!
I am visiting Rivera maya in July with a 2 and 5 year old. Are there any tours / places to visit that they would enjoy without being bored. Was thinking of maybe a dolphin show? But not swimming with dolphins

Bring them to Xcaret. It is a beautiful place very catering to kids. They have many animals there including dolphins. The new kids area will be great for your kids too.

Yes they do because there is an active nightlife but nothing like Cancun.
