We met Alfonso near our B&B and walked to the market joining a group of 7 (a young woman from Australia who had just come off the fire lines and 2 couples from the US, one who had just eloped and been married in Oaxaca).

We walked to a local market where Alfonso gave us some menu options in real-time and procured the ingredients on the spot. Local Oaxacan cheese, a selection of dried and fresh peppers, masa, chicken butchered in front of us, chocolate, hierba Santa were on the menu. Then we were ferried back to Alfonso’s family kitchen by his father and joined by a variety of family members who kept things moving in the kitchen.

The menu we settled on include a “many ingredient” mole negro (chicken), huaraches with squash blossoms, guacamole, multiple fresh salsas, rice and plantains flambéd with mezcal. We all took turns doing ever step so we came away actually experiences. Mezcal flowed throughout the process so day drinking was a thing.

We settled down to enjoy our product which was delicious.

We read a lot of Oaxacan cooking class reviews and there are a lot of options that looked great. We chose Alfonso because we are attracted to home cooks rather than fancy chefs (although we like those too, maybe next time) because we want things we will actually make the recipes ourselves. In fact, we are cooking the mole negro today (under Covid lock down) using the leftover mole paste that he packed up for us and we brought back over the border. That will make it much simpler and faster tonight.

By the way, we were able to bring back over the border, the specific dried chilies that Alfonso used (Chihuacle) but do remember to declare them (the Customs guy’s comment was “enjoy them”) but use a plastic bag rather than any natural fibers. If you don’t declare them, the fine is $300 for the first offense and $500 for the second😂.

Definitely a great experience worth the money.

Definitely this was fun and a wonderful experience! Chef Alfonso was punctual, friendly, funny, and made the cooking class overall awesome! Everything was clean, organized, he has a beautiful stove and kitchen; plus his mom and dad were great as well. In addition, we were with another couple and we had connected well. I went with my 17 year old son and we not only had so much fun but will be memorable, as we ended the class my son turned to me to tell me "That was a good time and exceeded my expectations, thank you mom". I highly recommend doing this cooking class you will not have regrets, unless you don't like eating : ) After our class we fully enjoyed the meal, we sat outside in his patio which was nice.

This cooking class with Alfonso was one of the best I've ever done. The entire experience was immaculately planned and the kitchen and dining area are absolutely beautiful. What we really enjoyed were all the different options Alfonso offered for the menu and how hands on and informative the entire experience was. He has a great way of teaching you how to prep and make everything while keeping the class light-hearted and the interactions so personal.

Besides the amazing food and techniques we learned, we really enjoyed meeting and interacting with his parents during the entire day. His mom and dad are wonderful and kept us laughing the entire day and made us feel like friends of the family as opposed to customers.

I think anyone who enjoys cooking, drinking mezcal, and learning unique techniques would have a wonderful time with Alfonso and his family and I cant recommend the experience enough...

The most delicious food I have ever had–seriously! I can’t recommend this experience highly enough. What a treat to have a window into the lives, home, and cuisine of Oaxacans. First Poncho led us on a tour of a mercado and a nearby tortilla factory where we shopped and learned about all the fresh ingredients that would be used to prepare our meal. Afterwards he drove us to his home, which is beautifully decorated with Oaxacan art, much of which was made by Poncho’s father. Then we got down to helping cook and learning how to assemble the intricate mixture of spices and fresh ingredients, prep and cook the many courses. After each hors d'œuvres was prepared we enjoyed them, and when the main courses were done, we sat down for the most delicious meal ever! The food was so fresh, flavorful, and richly and uniquely spiced. The flavors blended into an exquisite mouthwatering sensational experience.

Poncho and his mother, Noemi, were amazing hosts - welcoming, warm, fun, and superb chefs and cooking instructors. For a unique opportunity to meet Oaxacans, be welcomed into their homes, and enjoy their delicious cuisine–this is an opportunity not to be missed.

WOW such an amazing class. From beginning to end we felt like part of the family. Enjoyed picking out fresh veggies at the market w/ Alfonso, meeting his parents, and cooking in his amazing location/kitchen!! The menu was delicious and we had TONS of vegetarian options to choose from so dietary restrictions aren't a problem. It was very hands on, we learned a lot, and it was easily one of the best cooking class experiences we've ever had in person or virtually. It turned out to be private to just be & my partner which was a plus and the class was perfect paced so we felt like you were really enjoying a 3-course meal. All covid precautions were taken and it was very sanitary. Also, he offered Saturday classes which was uncommon when doing research for a cooking class in the area. 10/10 would recommend + and come hungry because you'll need the room!

If you are looking for a cooking lesson this is the one to book. Alfonso is fluent in English & Spanish (he’s also an English teacher) and a professional chef. The family business of cooking lessons is warm, informative and delicious and as others have said the cooperative approach to cooking is brilliant.

I took this class in August 2021 and it was an amazing experience. I enjoyed every part of the class from touring the market, meeting the family, preparing the food, and of course eating! The space is absolutely gorgeous and Alfonso does a great job of catering to the specific needs of each group. I am a vegetarian, so we made two versions of mole negro-- one without any meat products. Everything turned out to be delicious! I highly recommend making this class a part of your trip to Oaxaca.

Walking the Mercado with Alfonso was a great education in Oaxacan cuisine and locally sourced ingredients. He then took us to his home where they have a dedicated professional kitchen upstairs. His parents assisted and were very welcoming of us as guests in their home.

The highlight was making mole verde from scratch and pressing and cooking tortillas. We also made molote (much like a small empanada) with a ground pork filling.

It was a fun and educational day. I can’t recommend Alfonso more!

Such a fun cooking class! Alfonso is a great teacher, and very knowledgeable. He and his family are incredibly warm and welcoming, and their kitchen is a beautiful space to spend an afternoon. We learned to make two kinds of salsas, guacamole, taquitos, mole, tortillas, churros, and a mezcal cocktail in a fun and laid back atmosphere. Alfonso easily adapted it all to be vegetarian, and it was all delicious! There were plentiful snacks and drinks and we had a great time while learning a lot. Thanks so much Alfonso and family!

Alfonso is a very professional and seasoned chef! In our class our main dish was mole negro from scratch. We also made guacamole, 2 salsas, one appetizer, one side dish, and one dessert. After cooking we enjoyed the delicious food we prepared, and he surprised us by serving us his homemade passion fruit and mango sorbet to accompany the plantains flamé in mezcal! I was very impressed by Alfonso's knowledge. He is also lots of fun, as well as his parents. And we had lots of mezcal while cooking! :)
