About
Casa Crespo shares Oaxaca’s deep culinary culture. Widely recognized as the centre of Mexican cuisine, Oaxaca is home to 16 ethnic groups. Led by chef Oscar Carrizosa (who originates from the Mixteca region of Oaxaca), Casa Crespo offers classes and dining expertises based upon the traditional flavours and aromas of this famous cuisine. All ingredients are local and organic. Chef Oscar grows and raises his own corn, olives, limes, turkeys, ducks and chickens on a farm in his Mixteca region of the state. The true farm to table model is environmentally sensitive and ethical. Classes are offered in Spanish, English ……. And are always informative and fun.

We absolutely loved this cooking class! We take classes when we travel and this was by far the best. Chef Oscar and his assistant were so wonderful and organized. He immediately greeted us a Rosca de Reyes /Mexican King Cake eaten around the Epiphany and coffee/hot chocolate.
He let the nice small group discuss what we all wanted to learn how to cook and eat, which was big plus. He discusses allergies and had substitutes for every single aspect of the class. He’s easy to learn from and has patience.

Then we took a great tour of the Mercado to see where all the fresh food was coming from.

We made some of the best food we’ve had in Mexico! Delicious!!! At the end, we got to sit down to a beautifully decorated table amd were served mint tea, beer, wine and mezcal. I would 100000% recommend this to anyone traveling to Oaxaca, the food capital of Mexico and one of the ones in the world. Mole is so special and he takes the time to teach it.

We will be back for the PreHispanic cooking class the next time we go to Oaxaca.

While visiting Oaxaca my best friend and I wanted to learn how to make the traditional Oaxacan dishes we were sampling locally around town.

After reading countless reviews about Casa Crespos's Cooking School we booked a private session with Chef Oscar.

We're so glad we did!

From the beginning of the class, the Chef and his assistant practiced safe hand hygiene, and enforced strict COVID safety guidelines to ensure our safety.

Additionally, they were super professional, down to earth, and very accomodating to our likes and preferences.

We started out making our grocery list for the market and planning out the several dishes we'd be making throughout the day.

We walked to the market exploring the beauty of Oaxaca, once in the market we learned about the origins of many of the chilis, which spices are best for certain cuisines, uses for edible flowers, etc. Our trip to the market was a wonderful addition to our class!

Once we returned to the school it was all business from there! Chef Oscar and his assistant prepped everything and put us right to work.

Throughout the day we prepared a few moles, a soup, rose ice cream, picadillo, tortillas with edible flowers, tamales, salsas, and more!

Hands down, this was the best meal we had in Oaxaca!

Forget the restaurants, learn to cook with Oscar, and take those recipes back home and recreate for a lifetime.

We've taken several cooking classes while traveling all over Mexico and this by far was THE BEST ONE!!!

This is NOT to be missed!!!! We left Chef Oscar's class full and satisfied.

Great day!!!

We spend a wonderful afternoon with Oscar, deciding on our menu over a beer, shopping at the local market and the cooking up a storm (mostly successful). We have left with real understanding of the cuisine and what we like and why. We sat down to a seven course meal with wine which was simply delicious. Rated the day as one of our best so far in Mexico.

We spent an agreeable afternoon with Oscar: a private class.
At first, Oscar seems a bit formidable but don’t be fooled. He is deeply passionate about Oaxacan cuisine and it’s roots.
He and his small staff helped us prepare an incredible feast. Including drinks: beer, wine and of course, Mezcal.
Oscar knows what he is doing in the kitchen and he makes it all happen before your eyes, with your participation.
At the end, you sit down at the dining table and experience an exceptional meal.
As the ad says: Just do it!
Muchas gracias Oscar

We experienced several cooking classes while in Oaxaca. While interesting, we did not leave inspired to recreate the recipes. However, Oscar demonstrated how these local dishes could be made at home. His recipes are
Relatively easy and delicious. The meal afterwards was excellent. Would recommend highly.

We started with discussing food allergies and recipes we wanted to make. We visited the market and Chef Oscar showed us lots of Oaxaca regional plants and foods. Then we went to make our food. Chili relleno, Sopas Mariscos, Tamales Several types of Mole and Salsas. We accomplished a lot in a short time. And it was delicious. Homemade vegetable infused tortillas was a bomb

This was probably the best cooking class I have been to in another country. Oscar is very knowledgable, speaks great English and showed us how to prepare a range of dishes. The trip to the market was only a short walk and Oscar explained about numerous ingredients and uses during the tour. The whole experience was excellent and I would wholeheartedly recommend going. Thank you!

We did a specially designed class with chef Oscar Carrizosa, and had a great evening. Our menu included caldo de camaron, salsa, mole verde, tamales de flour de calabaza, and helado de chocolate oaxaqueña. We had a hand (literally) in making everything, including the tamales and the accompanying tortillas (some of which also included squash flowers). We were a group of 12, and the kitchen easily accommodated us all. Oscar is a very patient teacher, walking us through each step and sharing out the responsibilities so all had a chance to participate. He also shared the recipes with us.

I’m impressed with Casa Crespo. This was my first try at a cooking class, but it certainly won’t be my last.

Casa Crespo was the highlight of my trip to Oaxaca. My sister and I took the class, along with a bigger group. Oscar and his team made for a creative and seamless experience. From the moment we arrived we felt welcome. We enjoyed the local market, cooking and eating an exceptional meal, gracias!

Oscar delivers a cookery class with humour and patience. You start by choosing your menu then a visit to the market to see the ingredients used in Oaxacan cooking. Back at the house you prepare the dishes supervised by Oscar. You end up with a beautiful 7 course tasting menu. Beer and mescal are also provided. A great and memorable experience.
