Wonderful hosts, lots of laughs and delicious food

Dolores and her husband were delightful hosts. We started with a welcome cocktail and appetizer, and then each couple worked on preparing a dish under her supervision, ending with a delicious meal and a packet of recipes to take home. We all had a fantastic time and will definitely do this again.

wonderful fun evening

Dolores is the perfect host. We had a wonderful evening full of drinks, fun and oh yeah cooking. The whole meal was delicious especially the Chilies en Nogada. I would go back again and highly recommend this experience.
Her condo is worth the visit too as it is full of interesting artwork.

Scrumptious Saturday dinner!

My husband & I spent a wonderful evening with 6 new friends creating six of Dolores' special dinner recipes in her beautiful home. Each person participated in the cuisine assignments. It was a great evening!

Highlight of our vacation

Had taken a cooking class a few years ago that was very good so wanted to try one again and boy did this hit the spot. Delores and her husband live in a beautiful condo in Old Town and she keeps her classes quite small. In our case there was just one other couple. She had a six course meal set up, three courses per couple, complex menu but easy enough for us to handle. Everything went together well due to her guiding hand and we had a wonderful time. Just like dining with good friends. The menus are at the front of our menu file waiting for us, think I'll need a margarita first!
My wife commented on her glassware so she told us where to buy it, we have some coming and every time we'll use it we'll think of Delores and Richard.

Authentic and beautiful setting

After much research for a cooking class in Puerto Vallarta, we came upon Dolores and what a wonderful choice that turned out to be. Over the course of four hours we had intensive hands-on interactive cooking experience complete with laughter, margaritas. Dolores was able to answer all of our questions regarding the "exotic" ingredients used in the recipes, talked about Mexican culture and customs, and historical food practices. Then there was the tour of her beautiful professionally decorated home as Dolores is also an interior decorator! This was one of the highlights of our one month stay in PV. Highly recommended!

A WONDERFUL EXPERIENCE IN PUERTO VALLARTA

We were in Puerto Vallarta the other day and my wife and I, who likes to cook, decided to take a cooking class from Essence of Cuisine, located in Old Town. Dolores Brittingham, who is the chef and owner, provided the most fun and informative class we have taken in a very long time. Her sense of humor is delightful and we were very impressed with her knowledge of the Mexican cuisine. We started off with a welcome coconut tequila cocktail, participated in preparing and eating a 4 course meal, each course more delicious than the last and enjoyed wine throughout each course. We started at 6:30 and it lasted until 9:30. We left saturated to the brim! The school is in her home which is amazing in itself, filled with art and artifacts from all over Mexico. The walls are painted in bright Mexican colors and the table setting, which is put together by her husband Robert, was breathtakingly beautiful, it truly was a work of art. It was a treat just to be there. If you are looking for something to do other than the beach, try Essence of Cuisine. It was a night to remember!

Perfect Evening Dining with Dolores

My husband and I attended an wonderful event celebrating Frida Kahlo and Diego Rivera(two of our favorite artists) December 22, 2014. We were welcomed by Dolores and her husband into their home of arches and murals in Old Town which proved to be a treasure trove of Mexican art collected with an obvious discerning eye. This tableau set the stage for a gathering of visitors eager to learn to prepare authentic Mexican dishes. We thought we were aficionados of Mexican cuisine but we realized, once we tasted her dishes, we were sorely mistaken. The depth of flavors she developed in each dish were amazing, almost revolutionary! The company was delightful and the beverages exceptional. A truly remarkable and memorable evening. Do not make the mistake of missing an opportunity to spend an evening with Dolores while vacationing in Puerto Vallarta.

Fantastic evening in Puerto Vallarta

My husband and his family recently spent a week in our favorite city, Puerto Vallarta, and decided to take in a cooking class. After investigating quite a few options.. most of which were very expensive or were just "viewing" classes where you watched someone else cook, I came upon Dolores' class at Essence of Cuisine. What a find.
Classes are located in her delightful condo in old town, lovingly decorated with things purchased throughout the country. My sister in law, husband and I all took turns on a course and had a ball, all while enjoying the pre-done appetizers, drinking wine, and enjoying conversation with Dolores and her husband and the other guests.
What followed was a delicious dinner that we helped create, all enjoyed with stories of food, travel and lots of laughter.
We completely endorse having a different type of dinner out next time you're in Puerto Vallarta!

Cooking with One Hand in Your Pocket

Upon the recommendation from a friend, my travel pal and I decided to take Delores's class while we were in PV. It was a highlight of our entire trip.

After spending the afternoon wandering around Old Town, we walked to Delores's and even though we were a bit early, she and her husband welcomed us and gave us a tour of their lovely condo.

The class consisted of two other couples, both of whom were delightful and added to the fun of the evening. Delores had a six course meal planned for the evening and each person or couple got to put together one of the dishes. All the while, we sipped margaritas and generally had a great time.

Delores supplied us with the recipes, which was a good thing since everything was absolutely delicious. In fact, my friend and I made the chilaquiles the next night!

It was a wonderful way to spend an evening, meet wonderful people and really get a taste of Mexico. I recommend including this class in your PV plans.

Fabulous time while learning to cook Mexican style!

Hi! Four of us gals wanted to attend a cooking class while in Puerto Vallarta area. We found the Essence of Cuisine Cooking School. The instructor Dolores, was great! We had a fun filled evening learning to cook Mexican food, while we eat what we cooked and had interesting chat with Dolores about lots of things to do with Mexico. Plus we were enjoying Margaritas or wine. Doloresand her husband Robert, were welcoming & very informative. They have a lovely condo filled with Mexican artisans work. If you have an evening in this area and are interested in cooking, this is for you! We loved it!
