Delightful time spent with Silvio and his wonderful Giunca cheese

You must go to Cascina Pistone and have Silvio explain the story of how he got into raising sheep and making Giunca cheese. How often do you meet someone who is passionate about making a pure and delicate cheese that is all natural. And such a lovely man. He explained the cheese making process, showed us his 35 sheep and then provided a wonderful lunch of his various cheeses and fresh bread, dolcetto wine, tomatoes from his garden, homemade sausage and hazelnut cake. We had such a nice meal and a good time. The Giunca cheese is delicious, like a very smooth ricotta cheese but better!

Amazing family set up enjoyed by us all. This was the real Italian experience, the best way to see Piedmont and a family business handed down over the years. Simple operation, interesting with 18 year old son helping with translation from his Dad so passionate about their lives and his love of antiques, cheese making, family, their other artist photographer son and more. Kids fed the sheep, we understood his cheese made and then we enjoyed fresh cheeses locally produced with home grown plum tomatoes that were immense. All washed down with Dolcello red wine for Mum and Dad. Amazing experience thank you for allowing us into your home.

Delicious and very interesting visit.
Silvio describes his art from showing his sheep and kitchen to tasting the different cheeses with local wine and tomatoes and bread and cake.

We've visited several times and all the time we could be noticed how wonderful his chees and his passion are!! Every time he's exploring new style and his original chees and anyway it's amazing!!!

Passion for his art, his sheep and his family (in no particular order) make Silvio a real inspiration. The warmth of his welcome, his authenticity, and his dedication to quality, tradition, and excellence, are truly touching at a deep level. We had a wonderful lunch of the freshest freshly picked tomatoes from his garden (still warm from the sunshine), amazing cheeses of different ages and maturity, including a totally fresh one (which I forgot the name of unfortunately) which can only be eaten within 2 or 3 days of making, and is simply eatraordinary. A must visit if you are in the area (or even if you are not! It is worth a detour! Thank you Silvio !

Visiting Silvio is the first thing I talk about from our trip. My husband and I had a fantastic time touring Silvio and Antonella's farm and tasting his amazing, natural cheeses. I was nervous my Italian would not be sufficient, but Silvio was gracious, spoke slowly, and repeated for me as needed. His passion for his work needs no translation. It was inspiring to spend time with someone doing what he loves. The "fairy tale" cottage we ate in was gorgeous and romantic as it was lit by candles and it was dark outside. His cheeses are terrific, unlike anything I've had before. My husband is not a big cheese lover and he liked every one! The wine, bread, tomatoes, and delicious dessert were perfect with the cheeses. We bought some cheese in a jar to take home and I'm looking forward to serving it to friends.
Definitely go. You won't regret it. There are companies that organize visits to tour Silvio's farm. He can accommodate up to 22 people or so.

Silvio, the owner operator of this small cheese farm, is absolutely dedicated to the traditional, sustainable production of only the finest cheese. He used to have 50 sheep, but decided the quality of the final product was suffering, so now he only keeps around 30. His patiently hand crafted cheese is superb. Of course, with only 30 sheep, there's not much of it so he doesn't dabble in lots of styles, just basically the traditional style of the area. He does age the cheeses differently and it's quite amazing to sample cheese that 2, 3, and 6 days old and see the differences. This is an excellent agritourism site.
