Visited in july 2021 on a trip through Italy with my wife. We were warmly welcomed though it's obvious that there hasn't been much tourism lately. That didn't stop a warm welcome!

The visit is rather quick and you get a personal introduction into the world of parmesan cheese which is very interesting. As we came when the daily production was almost finished we didn't see much of the process itself, but got a tour around the premises and information about the process of prodution, the certifiacations as well as a nice tasting of some different ages of the cheese.

If you are in the area of Parma, you must stop at Ciolatte family owned & operated organic Parmigiano Reggiano farm. Serena was very knowledgeable and a very personable guide. We had a tasting of the cheeses, fresh butter & jam. All made at the farm. All so yummy. Thanks again Serena. See you in Toronto.

Don’t miss out on coming here. For only 25 euros each we got a personal tour with the owner around this place which was fantastic and intimate. We can understand Italian so had a mixture of that an English which was perfectly fine for us, but fully English ones are available. Send an email to their address (found on their website) and ask to book for a date and time. Just up the road are their cows. We even had a tasting at the end of differently aged Parmesan with bread and ricotta and even ice cream. An incredible experience to finish my Erasmus year

What an amazing find!! We arrived in Milan and drove straight to this place to find the most amazing people, and organic cheese factory! We were guided through the process by Serena, who took the time to give us an in depth tour, even though she was leaving the country for a trip later that afternoon! She answered all of our questions and let us spend time gawking at all the amazing cheese in the Cheese Sanctuary! Not only that, but we happened to visit just before a big Ricotta festival, so Serena's mother, Affa, was busy in the kitchen making spinach & ricotta ravioli...some of the best we've ever had! She invited us to observe her cooking, and then served us a delicious meal, complete with wine, cheese, pasta, and ice cream, all homemade! Affa was the sweetest & most hospitable lady in Italy. We didn't even want to leave, and got many hugs and waves on our way out. We will have those memories for the rest of our lives, and are so fortunate to have picked the best Parmesean fattoria in Italy! I cannot recommend this place enough! If you are a foodie, do yourself a favor and stop by this place for a tour (actually, email first to set a tour appointment!), you will have zero regrets, only a full belly & fond memories! Grazie to Serena & Affa, we appreciate your hospitality and look forward to our next visit!!

We had an amazing visit to Ciaolatte. I must mention that in advance, we had several schedule changes that Filippo always accommodated us with in the kindest way. When we arrived, we met his mother who kept us laughing throughout the visit. We learned so much taking the cheese tour as Fillippo did a wonderful job explaining the process. We got to see cheese at various points throughout process. Afterwards, we had lunch prepared by Fillippo's mother and they even sat and ate with us and we had a lovely visit. My father is a farmer in the US and they compared farms and farming practices. Afterwards, they gave us directions to get to the dairy and see the cows. We can't think of a better way to immerse ourselves and learn about Parma culture.

We visited Ciaolatte on our way from Cinque Terre to Lake Como. This was our 10th trip to Italy, but had never toured a cheese factory before. We looked for an opportunity because we had our parents with us who are in their 80s and we were looking for a tour they would enjoy. We love eating Parmigiano Reggiano back in the States, and were excited to have the opportunity to see how it is made in a family run business. We are so happy we found Ciaolatte!

Serena was so accommodating and gave us a wonderful tour of the operation, explaining the process from start to finish. We didn’t realize prior to arriving that the operation is 100% organic, and even BioSuisse, the highest quality organic. We didn’t think anything could top the experience of being in the “cheese cathedral” until Serena sat us at a table to taste a variety of products produced on the farm, including of course their delicious cheese. Thank you Serena and Ciaolatte for a wonderful memory!

Serena, daughter of the founder, gave us an incredible tour and explanation of the lengthy process in making Parmigiano Reggiano cheese. And a much better understanding of the tastes of different aging levels.

This is a family run business who are truly working the "dairy" - do NOT let any initial lack of understanding of time affect what you can learn from this family who are not only working their core business, but also looking to improve and grow with a new BioSuisse process! Book a tour and watch first hand as they work the copper tanks to hand cloth the cheese, use modern machinery to extract the whey, and combine traditional with modern techniques through the entire processing and aging. Serena gave us history and insight which can only come from a multi-generational perspective.

If you have children on your trip, be sure to include a stop at Ciaolatte as the family regularly hosts school groups to learn about cheese making. Your children will learn and have a new appreciation for the hard work which goes into the quality food they eat.

This visit/ tour/ tasting MADE our trip to Parma!

Our time at Ciaolatte was one for the books - both for the cheese and for the accommodation. Though we had somewhat last-minute plans and arrival to Ciaolatte, we were given a friendly welcome and an overall experience that exceeded our expectations. The staff was able to squeeze us in to a tour the day-of and on top of that, even provided short-notice accommodation for the evening. The tour itself was very insightful and recommended for anyone interested in learning about the "King of Cheeses" by seeing and tasting. What sets Ciaolatte apart from other Parmesan tours in the region is that it is a family-owned company. If you would like to have a less-commercialized experience, you have found the right place. Additionally, Ciaolatte is one of the few producers of organic Parmesan which also sets them apart. Beyond just the cheese tour, our time at Ciaolatte was topped off by a delicious and home-made pasta dinner provided by the owner. The food was great and made better only by her amazing hospitality. Overall, we had an incredible and unforgettable time at Ciaolatte.

Before starting our christmas dinner, we had the chance to discover how parmaggiano Regiano is produced, with lot of passion and experience!

550 liters of milk to produce a 45 kgs cheese! Simply amazing!

Will come back with my family for sure!

We were late to the tour but Serena our guide was so kind that she ended up doing a tour for us. We had accidentally driven to another town also called Borghetto close to Parma. Make sure when you’re driving, locate Borghetto close to Noceto. The place smelled fantastic and we loved the sampling of cheese. Such a great place. Grazie mille
