- doctorbroonLondon, United Kingdom18 contributionsLearning authentic home-cooked Japanese food the easy way with patience and love.We arrived mid-morning on the charming and old Sakura line train in Tokyo at YUCa’s lovely home kitchen. We were greeted so warmly by YUCa and also all of the other five guests who we had not met before. I’m always quite nervous in new situations like this, not knowing what to expect, but we were instantly out at ease with a wonderfully knowledgeable and generous host and a absolutely delightful group of people who were all here to do one thing: learn more about the subtleties and hidden secrets of actually cooking home style Japanese food. We’ve been interested in Japanese food for many years and learned much from books, and even YUCa’s own YouTube channel. However, nothing compares ideally with having direct tuition in coming and revealing those hidden secrets. Simple things like the tare spoon/ladle, which I’d seen so often, but never knew what to use it for (we’ll definitely be buying one!). Our planned course today was for ramen and gyoza. The ramen was a soy sauce based one taking us from making the broth and the tare, through to making and preparing all of the toppings. We even learned how to law the perfect marinated soft-boiled egg, which I have never been able to perfect. For the gyoza, we each had a role to play, from chopping vegetables, to adding all the oils and other flavours of these lovely dumplings. We then each mad as many as we could with available filling, making a “gyoza pizza” that was gently fried until crispy. Once cooked and prepared, we sat down to enjoy our lovely meal we made together and continue our lovely conversations, although there was also a lot of silence given how lovely the food was. We had a wonderful day and learned so much that we will all take home to our own kitchens and prepare for our families. A wis person once said “all we need in life is food and love” and today we had that in abundance. I can’t recommend YUCa’s course highly enough. We learned so much and in such an easygoing environment. The food was delicious and we were all amazed that we had made that together for the first time. If you get the chance watch some of YUCa’s YouTube videos, but better still attend one (or more) of her wonderful courses.Visited November 2023Traveled with friendsWritten November 3, 2023

We did a home style Japanese cooking class with Yuca that was amazing. We made rice, broiled fish, fried chicken with homemade tartar sauce, dashi, miso soup with tofu, a Japanese omelet and finally we made pickled cucumber. Right away, Yuca welcomed us into her home and made us feel welcome. We sat and talked for a few minutes to get to know each other, and then we started cooking. Yuca is a pro. She managed our group (5 of us) very well, made sure we all had tasks and participated, and as we cooked, she continuously talked to us and patiently explained what we were doing and why we were doing it. From scrambling the egg with chopsticks without making bubbles, to cooking the fried chicken in a way that ensured as little oil as possible was absorbed into the chicken. She also taught us the technique of rolling the omelet and building it out in layers. We all walked away with a profound sense of the simplicity and the delicacy of good, home style Japanese cooking. It was really fun, and when we finished our trip (that included stops in Osaka, Kyoto and Tokyo), we reflected and realized that the Cooking Class with YUCa was probably the highlight of the trip. If you want to learn about Japanese cooking with someone who can explain what you are doing, and why, who can artfully and simply tell you how to recreate the dish as prepared, but also vary it as desired, and frankly who was an absolute pleasure to be around, then I strongly encourage you to take YUCa’s class! Well worth it! And make sure you go get green tea ice cream at the place that she recommends. It was about a 10-15 minute leisurely flat walk, and it was awesome!

Whether you’ve lived in Japan for a while or are simply visiting, learning from and cooking with YUCa was a worthwhile treat. I have appreciated eating and cooking Japanese food for many years, but have gained a better understanding of the origins of these dishes through our pre-cooking lecture and am now able to truly perfect some of these dishes following YUCa’s thoughtful guidance. Following the class, YUCa also provided a great tour of a local grocery store with insights on where to find certain items, which ingredients would suit different cooking best, and how to use traditional seasonal veggies.
I’d highly encourage anyone thinking of taking this class to sign up. You’ll be more than happy you did.

This class was a highlight of our time spent in Tokyo. I went with a group of three people. It was a very personal and informative experience and we had a blast the entire time. Yuca is energetic, knowledgeable, and passionate, which translates well into her class and the overall experience. We went out for a nice Omakase dinner in Ginza later that day which we all felt was so much more fulfilling because of Yuca’s cooking class. I will be sending anyone and everyone I know who is visiting Tokyo her away. I really cannot say enough how much fun we all had.

My husband and I had a wonderful day date with YUCa's Ramen and Gyoza making class. We really enjoyed learning to make (AND EAT) our own authentic Japanese meal. Yuca communicated with us in English both before and during the class to ensure we were comfortable with all directions. We feel confident that we can recreate the dishes at home and would love to return to try her sweet class next!

What a fabulous time we had! We had a menu designed especially for us which Yuca shared with us beforehand and that we went through together - nothing was rushed or any pressure put on to finish at any given time.
And yet, we managed to put a huge number of dishes together, which all tasted wonderful.
Yuca explained the Japanese way of eating, what to say before and after a meal - and we were able to ask all those questions that you don't get the opportunity to find out about.
A truly memorable experience, and one that I highly recommend
