This brewery is a hike from Tokyo but totally worth it. They provide English speaking tours and were very responsive via email. The tour was excellent, as was the sake. We tried the beer at the cafe afterwards and that was great too.

You can use Google Maps to get the directions from your starting point. I took one train directly from Shinjuku station to Haijima station and walked another 15-20 minutes from there.
