About
Family run company established on 1905, producer of fine Balsamic Vinegars. The historical aging rooms are hosted inside a medieval tower, and are open to guided tours upon reservation (ITA/ENG). The free tasting of different aged Balsamic Vinegars is always available inside La Vecchia Dispensa's shop. Inside the shop is also possibile to find a gourmet selection of local food products: liquors, local wines, jams. Contact us by email or phone for reservations.

We were on our way from Milan to Bologna and spontaneously decided to stop by here. Although we have not booked a tour in advance, the operators took time and gave us a tour of their balsamic dispensary (10€ p.p. - we were 2 people). Afterwards we did a tasting (which was great!). The lady who did the tour was so sweet and friendly. It was very informative. The production of balsamic, from the grape to the finished product, was explained in an understandable but detailed way. The location - a medieval tower that used to be a prison - is impressive. If I could, I would love to give 10 stars!!!
(The balsamic is also world class and at fair prices!).

This is one of the best tours I have ever been on. The master balsamic vinegar maker gave us a guide around the premises, full of interest for his subject, information he passes on to visitors with ease. The process is fascinating, especially if you have ever seen how wine is made (totally different), and the tasting opens your senses up to the subtle differences between the vinegars.

Seriously great tour, and well worth the trip out from Modena.

We had already visited the store here several times. Recently we took the tour to see how balsamic vinegar is made. The ‘master’ himself was the tour guide and spoke to us in English with a passion that was almost infectious. We were taken into where the magic happens and at the end we were invited to take part in an extensive tasting session. This business caters for tourists by offering smaller items to purchase from the store too. I can’t praise this place enough. The fee to take the tour was surprisingly low. Bonus! Beautiful website in both Italian and English.

IIaria gave us a wonderful history of the making of balsamic vinegar and a very informative tour of their facility. We called ahead to set up an appointment, and she was very gracious in accommodating us.

The tasting of their products was very helpful in deciding which ones to purchase.

A terrific insight into local history and culture!

We loved our visit. Ilaria was our guide. She was very friendly and knowledgeable. Going up the tower was an amazing experience. The tower transports you back to 1905. Ilaria explained the history and balsamic process in great detail. She was able to answer any questions we had! I recommend this tour. A small, quiet, quaint hilltop Italian town filled with history (& balsamic)!

It was a great tour given by Cristina. Her English was great and she was very knowledgeable about the product and the history of family and the property. The tasting was fantastic and we had them ship product that we purchased back to the USA.

You cannot go to Modena without thinking about fine balsamic vinegar, and this tour and showroom met our needs perfectly. Personal tour was only 5 Euro per person, and the gift store had fine quality items that we brought home as gifts. WARNING: the castle portion has very steep stairs that are NOT for the mobility challenged! Combine with a lunch at the pizzeria next door.
