This was absolutely the highlight of our trip to Lecce. The owner, Ylenia, was entertaining and passionate about bringing authentic Apulia cooking made by the village mamas back. They accommodated my request for a vegetarian option on the spot and with a smile. We made focaccia with tomatoes, olives and onions, orecchiette with a delicious broccoli sauce, miniature meatloaf, a zucchini side and a delicious pear and chocolate pastry. I can’t wait to try all of the dishes on our gourmet club. If you like to cook this is the place to go in Puglia.

I wanted to come to Italy this fall and part of the plan was to take some cooking lessons. We were 7 family members gathered together in two villas in Lindinuso and we all traveled up to Squinzano for the day. I love this place. Lessons are guided by local Mommas. Ours were Momma Anna and Momma Angela with Ylenia guiding the process. We made focaccia pugliese, orecchiette pasta, zucchini bites, melanzane ripiene, chicken with gorgonzola and chocolate bites. Most of these I will be able to do when I get home though I confess I am no pasta master. And imagine my excitement when I found out Momma Anna had been written up in the New York Times! As good of the day was it was made even better by the school's own wine. The only sad part was they only had one bottle of the excellent local rose to sell us when we left. Now we have to decide if we want to adopt one of their olive trees. Ah the hard decisions of vacations in Puglia. I have really come to love the cooking of southern Italy

I booked a cooking class for our family of four with Ylenia and it was one of the best activities we did on our recent holiday to Salento. We thoroughly enjoyed cooking with Mama Angelina and Ylenia who taught us so much about Cucina Povera. Our lesson was hands on, and everything we cooked was delicious We sampled great local wines and learned a lot about Salento's beautiful villages which helped us as we continued our tour of Salento. Ylenia is passionate for what she does, and takes great pride to ensure that everyone has a great time and feels welcome in her kitchen. Booking was simple, location is easy to find and Ylenia and her team truly provided a wonderful experience for my family.

My boyfriend and I were on our way to Lecce from Monopoli, and wanted to do a cooking lesson en route, so we booked with Ylenia. This was truly a lovely experience - we rolled up into this small town on a Sunday, so the shops were all closed and the town's old men were all gathered playing cards in the piazza where the school it...seemed like out of a movie. Ylenia, the founder of the school, welcomed us upstairs to the spacious cooking school, where she has taken pains to decorate the school in a way that celebrates the town's agricultural and wine-making history. The cooking lesson was ostensibly why we were there (and the food was divine), but Ylenia made it a more culturally significant experience - playing opera as we worked, talking about the importance of nutritious but simple, locally grown foods in Salentine cuisine, and generally sharing her passion for the region with us - in addition to introducing us to the neighbor and the "mamas" from the town, who work in the kitchen and help prep out the food the students work with - with a generous and delicious snack / wine-tasting as well. I really can't thank Ylenia enough, it was a special experience and I wish her and the school all the success in the world.

Cook in Puglia offers one of the best cooking experiences in Italy. Ylenia answered my emails promptly and catered to food allergies and preferences. She is a lot of fun and provides a great cooking class. We made several delicious dishes including focaccia, orecchiette pasta, involtini de melanzane, zucchini and potatoe bites, white parmigiana and chicken with herbs using local products while tasting some lovely wines, snacking and listening to opera. The class is very hands-on and informative. Recipes and an apron were provided and techniques were demonstrated so that the dishes could be repeated in your own home. We began our class at 10:30 and left after several hours, an incredible meal, dessert and coffee. Squinzano and the Puglia Wine School is an easy drive from Lecce and an absolutely gorgeous place to take a lesson. I highly recommend Cook in Puglia. Thank you Ylenia for a memorable and truly fun day.

Incredible experience with Ylenia and Mama Angelina cooking Pugliese cuisine in Squinzano. We learned how to make orecchiette pasta, tasted exquisite wines in the style of Puglia. Ylenia's passion for cooking, Puglia and world cuisine was evident throughout the entire experience! It is the experience we will remember most from our honeymoon.

Recommend enthusiastically, this is worth the trip! Thank you Ylenia for making our day of cooking so very special.

My husband and I loved this cooking class -- so well done and so much fun!! Ylenia began by showing us the lovely old rooms which have been renovated for this experience, including many old photos of people gathering grapes and producing wine even as far back as the 1920's. Ylenia works with "mamas" who live nearby. Our "mama" was Angelina, such a lovely lady and, of course, great cook! Together we made six items, from appetizers through dessert, including even orechiette pasta made from scratch. And, of course, we drank two wonderful local wines while preparing and eating the food we made. Everything was delicious! Ylenia has a great love for what she does and much enthusiasm for the local cuisine and products. We cannot wait to try to make these dishes when we get home. We had a great time and highly recommend this "cooking in Puglia" experience.

Hosted in an idyllic location in a small sure in Squizano, the atmosphere felt authentic.
Although hot outside the large airy building felt cool inside. We started with Focaccia bread and moved on to making a past dish, a veal dish and a delicious peach dessert.
We spend about 3 and a half hours at the school and learnt no only about cooking but also about the lifestyle of the people of Puglia. An excellent host aided by 2 equally helpful mammas. Thoroughly recommend.

We took the cooking class with our daughter of 15 and we all enjoyed it. The location it really nice, the old city hall of Squinzano. And the great explanation by our host lady, plus 2 Italian mama's that assist in the kitchen is great. We were with a group of 5 only in total, which meant that we got a lot of attention. During the class (from 10.30 to around 15.00 hrs) we prepared several dishes and also ate what we prepared. Plus enjoyed some really nice wines that were served with it. I can really recommend this class for the full 100% even though we paid 90 euro's each person. Worth it!
