She communicated with us primarily using a translation app, but her husband and friend were also there to assist with translating. They also have a small dog who is very friendly. They were very welcoming, hospitable, and so sweet. We made tortellini, pici, and tiramisu, then all had dinner together with some antipasto, wine, and homemade limoncello. All the food was amazing, Paola was the most patient teacher, and we had the most wonderful evening chatting with them. Highly recommend her cooking class!!Written December 2, 2024
- PCM12120 contributionsAn authentic taste of Italian cookingWhat an amazing day !! We were welcomed into the home of Toby the dog, sorry, no Maria and her husband 😉😂. We were patiently guided through the making of pasta and made ravioli and pappardelle. She taught us how to make the filling for the ravioli and also a tomato and basil sauce. The rolling out of the pasta was a humorous part of the afternoon. My wife being slightly better than me and a quizzical, but fun look for Maria 😂 with a helping hand to follow. We also made Tiramisu. All this whilst Toby the dog made sure we were happy and felt welcomed! We were then treated to a sit down meal with wine and meats and cheeses from the region, then the pasta we had “created” followed by the tiramisu. This all helped down by wine and a shot of home made limoncello to finish. Were made to feel comfortable and at home from the moment we arrived. Google translate helped where words and hand signals couldn’t. The highlight of our trip so far. Arrived as strangers, but feel we left as friends. The table set with rolling pin, flour, salt, olive oil, eggs and boards to roll out the dough. She gently walked us through each set of the pasta making process. We made ravioli, pappardelle and tiramisu. In addition, she prepared several appetizers of homemade cheese and sausage for us the enjoy. She made us feel right at home. - 632sallyannm0 contributionsCooking in TuscanyPaola Puccinelli opened her home to teach the making of Tuscan Pasta, Tordelli and Pappardelle and Tiramisu. Be prepared for a wonderful experience with a Hostess her just made it all worthwhile. Paola shows you how and the you get busy making the pasta yourself whilst she stands by showing how to use the pasta machine and instruments correctly. This is important to get the right consistency before filling the pasta or cutting it into the pappardelle. The filling is also shown exactly : hands on again chopping fresh herbs, garlic, warming it in extra virgin oil and mixing into the prepared mashed potatoes with egg and parmesan. Learning how to roll out the dough use the pasta machine it was time to make the little tordelli. I learnt so much about the kneading and preparing of the 2 different doughs. Making the Tordelli has its own techniques. After cutting them out they were placed on semolina cloth and in the fridge to cool- all tips needed in making the best pasta you have ever tasted. Paola already prepared the beef ragout for the pappardelle. Then whilst the pasta was resting we made mini tiramisus. This was very quick in preparation. After 3 hours of preparation it was time to cook. The pasta is cooked very quickly for 2 mins only in boiling salted water. The pappardelle were served with the beef ragout and the tordelli were drained and swirled in butter with fresh sage. Then it was time to enjoy the fruits of our work. Be prepared to eat for at least 11/2 hours on top of 3 hours allocated for cooking class. Paola prepared the perfect table. We were accompanied by her husband and lovely girlfriend who took Fotos and helped clean up after us. The table was set and Paola had prepared Tuscan Salami , Proscuitto, Chicken liver paste on bread , cheese from Tuscany and her home made Tuscan fruit relish which was delicious.Prosecco was served with the anti pasti and a lovely organic Chianti with the pastas. Then there was a delicious desert to finish. After 41/2 hours of cooking and learning and eating it was time to say goodbye. I can thoroughly recommend this course to everyone who loves italian food and needs to know how to prepare pasta correctly. Paola, I cannot thank you enough for the wonderful time I had. It was really good to create the pasta and tiramisu, Maria explained and showed everything, I had fun in the process. When everything was ready we had some appetizers, and then tasted the pasta and the tiramisu, while having really good conversation (and food). I enjoyed the cooking, and also that I could practice Italian - I used to speak, but years ago, so was rusty, but they had patience and humor for me and we had good talks. I can only recommend if you are in Viareggio, really good and authentic experience, where you can speak with locals and also learn about the wonderful Italian cuisine .Written April 2, 2024

We were celebrating our one year anniversary so they opened a bottle of Prosecco to celebrate. They demonstrated how to make the pasta then gave us a turn. The lunch was so delicious, our best meal in Italy! We recommend this tour as a must do in Italy!Written March 29, 2024
- amf0915660 contributionsPhenomenal food and company!!!My mother and sister and I visited Italy this past August. One thing that we were interested in was a lesson in some local cuisine. We were paired up with our Caesarine, Maria, and her husband Massimo. Both Maria and Massimo were lovely and welcoming. Maria was very knowledgeable and an excellent teacher. We learned to make ravioli and Tagliaterra (sp) and tiramisu! After making our different dishes and desserts, we sat in their lovely dining room, and enjoyed the fruits of our labor! This was my personal favorite meal of the entire week. It was even fun to communicate through Google translate… I would highly recommend participating in an event like this. She is absolutely the best guest we could ever had!!! We started being received in her lovely house in an amazing village near Viareggio! The guest offered us a lovely beer and Prosecco. We had a private class only me and my boyfriend. AnaRita was super helpful with everything and made us feel welcome all the time! The ingredients used for the class were very high quality and additionally we had veggies and tomatoes straight from her garden. I never had such a great tomatoes in my life, they were sweet like strawberry!!! The guest also offered us a platter with Italian cheese, prosciutto etc. We had dinner in a dinning room with a lovely air conditioner that made us very comfortable and refreshed! AnaRita is the best guest, also presented us with a receipt book that she wrote herself, with lovely photos, also made by herself. Not only all this perfect experience, the guest Ana offer to drive us back to the hotel (in another city) after the course. I have no words to describe this perfect experience. Maria Paola!My 22 year old daughter and I had so much fun making ravioli, tagliatelle, and tiramisu in the home of Sra. Maria Paola. She is the penultimate Nonna that you’d want to teach you! She was warm and encouraging! Google Translate helped bridge our language barrier and our dishes were a success. Would definitely do it again!Written July 25, 2023
- StephenLaPadula0 contributionsAmazing Culinary ExperienceViareggio is beautiful but there aren't a lot of tourist attractions which allowed me to do something slower, authentic and that I could never replicate, and so I did it twice. Paola and Massimo are wonderful hosts. We walked the neighborhood and I even got to pick out some items for our anti-pasta. We returned to their home where I made spinach ravioli (pasta and filling all from scratch) and tiramisu! Paola is patient and helpful ,and with her guidance everything came out great. We took pics and videos so I will always have this memory. A wonderful experience, Highly recommended!Written September 5, 2022
- SteveBKNYC0 contributionsA fun night and experience in Viareggio.We were warmly greeted by Paola, her husband and her lifelong friend at their home. She had the whole evening planned for us. First a pasta/ravioli making demonstration and hands on activity in her kitchen. Once we were done we went into the beautifully set dining room for some prosecco and description of what the meal was going to be. We asked for a vegetarian/fish menu, which she accommodated with no problem. All of the food was delicious and of course homemade. All of the ingredients came from a local garden. Sitting around a table with a local family was a great experience and I would highly recommend it for a change from your nightly restaurant search. One thing that I would note is that they spoke little to no English. I understand Italian and can carry on a basic conversation, which made the night all the more fun. If you don't know the language you could let them know on the website and I think there is a way to work it out.Written July 8, 2022

Our cooking experience with Paola was amazing, great fun and a wonderful experience. Paola took us to the market and showed us some of the stalls and items on offer. I loved the salumeria: all the wonderful meats, salamis and cheeses, and the smell - wonderful! Back at Paola's house we enjoyed a little drink and some snacks before getting down to the serious business of making dinner. We made pasta, the proper way and the filling for our ravioli. Paola was very kind, helpful and patient; showing me how to make her delicious tiramisu. We had quite a production line going as we made the ravioli! I was amazed at the simplicity of the sauce for the pasta, just tomatoes and garlic left to simmer. Delicious bruschetti with salami, cheese and delicious panzerotti started our meal. The ravioli was fantastic and my husband dived in for a second helping! Paola's tiramisu was just fabulous, so creamy and just the right amount of coffee and chocolate. All served with lovely Chianti and a refreshing Prosecco. The evening came to a close with a glass of Paola's homemade limoncello - delicious! We had a super evening with lovely people, our new Italian friends! My fairly basic Italian was stretched to the limit but the challenge was fun and expressing our delight with the food didn't really require words! I would thoroughly recommend this experience and given the opportunity we'd do it again, it was our best day in Italy!

This was truly one of the great highlights of our trip to Italy! Maria took us shopping with her husband, who helped interpret. My husband and grown son came along and they loved it as well! We learned how to make pasta from scratch and tiramisu (our fave) and they were so kind and patient with us! They had a great kitchen in which to cook too! LOVED THIS SO MUCH! I wish I could give it 10 stars!
