THIS COOKING CLASS was a highlight. We actually regularly make the sauces we learned to make, and often make the bruschetta when we have company. We have even whipped up our own handmade pasta a few times. This was just the most charming time in Italy and actually the yummiest wine I tried anywhere. Our host, Fulvio, was unbelievably welcoming and warm, and immediately put us at ease. He took the time to explain the story behind every recipe we were preparing, and we were charmed at how the family welcomes their guests like their own. He’s helpful, charming, and the best cooking instructor I have encountered. I had asked him for a menu of hors d’oeuvres and finger food. He was very accommodating. When we got there, we were welcomed with open arms by Fulvio and his niece Katia. They were wonderful about helping everyone participate in food prep as he gave directions and explanations. (There were 13 of us – a lot to handle in that situtation.) The Tuscan specialties we prepared – pappa al pomodoro, a bruschetta with local sausage and cheese, and about a dozen more) were intertesting and delicious, as well as easy to prepare. My adult children and their spouses were definitely game to try their hand at pasta making and the end result was delicious. We made one type of pasta (pici) and 2 kinds of sauce (red and cheese). We also made chicken saltimboca, antipasti and garlic bread. Katia was very patient and made the experience very enjoyable and the food was delicious. - MF24030 contributionsExceeded expectations!The highlight of our 16 day trip was Katia's cooking class, preceded by a 2 hour truffle hunt. We were able to use our truffle bounty as part of the class. Katia is incredibly capable, proud of her home country, and extremely easy to be with. She is very engaging, just like being with your favorite sister. She truly enjoys sharing her knowledge and experience. It's not only he finest ingredients, but the techniques and flavors she taught us how to create with simple recipes will stay with us forever. She offered a cheese tasting platter, explaining the different agings, textures, and flavors. Then the bruschetta.. what a difference from what I have been eating. Then the hand made pici pasta and linguini, much different from what we are used to making. Light, yet full of flavor. We used the linguini for the truffle sauce...outrageous! The pici was used for the most incredible pancetta sauce. She taught just how to make it the right way, and how to add ingredients at just the right time. And saltimbocca. so simple, but done right, full of flavor. And the wine kept flowing! A few local snacks in between, and then we made tiramasu. You think you have had good tiramasu? Nope, not until Katia shows you how to make your own, the right way! Wish we would have stayed there, too. If you want to get the real flavor and techniques of Tuscan cooking, do not miss Katia & Uncle Fulvio! And Katia grows and makes her own olive oil. What we liked most was the relaxed atmosphere in Fulvio's actual kitchen. It was comfortable and low key. Fulvio was gracious and funny. We made 2 types of pasta from scratch, pasta sauce,chicken saltimbocca and tiramisu. It was fabulous. They also arranged for us to go truffle hunting prior to the class and that was so much fun too. Our cooking class with Fulvio was an unforgettable experience! He is an extraordinary chef, and the menu we prepared was both outstanding and absolutely delicious. We had such a great time learning how to make pasta and bruschetta, and the whole process was filled with laughter and fun. Fulvio's warm and encouraging personality made the experience even more special – he’s not only a fantastic chef but also a great conversationalist, keeping us entertained the entire time. His homemade olive oil was so delicious that we ended up purchasing some and having it shipped home. We can't wait to receive it! Highly recommend this class for anyone looking for a memorable, enjoyable, and educational experience in Italy!

This course was one of the highlights of our two-week trip through Italy. The food was as delicious as advertised, and we learned a lot about Tuscan cooking: the emphasis on ingredients, the history, etc. But the best part was Katja herself, who was such a lovely person to spend an afternoon with. She was so good at engaging the kids and giving everyone fun jobs to do, from rolling individual pieces of pasta with a toothpick to stirring sauces and measuring the salt and pepper. The course itself is very good value, as there is a generous amount of food and wine included and we all left very full. Our group ended up going a bit over our time, but we never felt rushed. Katja asked us lots of questions about ourselves and we came away feeling like we'd spent the afternoon with a friend.

Katia was great at establishing connections with everyone and also facilitating interaction between participants. The recipes (pasta, two sauces, bruschetta, and a chicken dish) were tasty and well-suited for quick preparation. What disappointed was a certain “let-down” in the middle of class. We barely saw Katia after preparing the first dishes (those participating in the preparation of the chicken dish) did see her longer but, after the chicken was served, nobody even knew whether the class was finished or not, till we went and asked. Other guests were attended to and our group was basically put on the back burner. It’s regrettable since it started well and could have been an overall fun experience.

I don’t know where to even start this review. We arrived knowing that it came highly reviewed and recommended, and left feeling like we made new Australian and Swedish (and Italian!) friends.
The class included not only Italian appetizers and 3 courses, but also general cooking tips and discussions on how we cook at home, ingredients used and our general preferences.
We felt so at home with Katia and she is a natural teacher and amazing cook. While the “class” lasted more than the published 3 hours, we stayed even longer, talking around the dining room table with the other attendees, ending the night with exchanged contact info.
This was definitely the most memorable experience of our 2-week trip to Italy. I would recommend it to anyone looking for a true and genuine Italian experience.

It was important to have my family of 10 experience not only pasta, desert and lunch preparation during our stay in Tuscany but to do so with a knowledgeable multi-generational authentic local family. Katia and her uncle Fulvio exceeded our expectations with their easy going and warm professionalism that appealed to all. Being in their home kitchen and dining room truly felt like revisiting the past with my Italian grandmother's cooking and very large (and long) family dinners in the dining room. If you have the opportunity don't hesitate; just go, learn and have fun!

One of the most enjoyable days of our trip! We learned so many tips and tricks and couldn’t believe how easy it was to make simple ingredients so tasty. We are already planning to make the pici and aglione sauce this week for one of our dinners. Katia and her uncle are generous with their stories, knowledge and space, they are so funny and we loved getting to know them and the other lovely guests we met from America! We couldn’t believe how beautiful the Tuscan sunset was as we were sitting down eating the dinner together… you really get a sense of what life would be like living and cooking in Tuscany. We’ve brought one of Katia’s olive oils back home to Australia and we can’t wait to use it in our cooking. This was definitely worth it and I highly recommend doing this class, you’ll meet new people, hear amazing stories, and learn SIX new recipes, we cooked and drank and ate so much but the night flew by as we had so much fun :) Thank you again Katia xx

If looking for an authentic Tuscan cooking experience (not just class), you should consider this specific farmhouse, II Vicario, where Fulvio and Katia (the owners) will take you on an incredible trip of Italian food history!
Fulvio helps explain how to taste differences in olive oils, why Italians start to saute onions or garlic in cold oil, why Italians use either garlic OR onions in a dish as opposed to both, why certain foods are linked together for an amazing taste that makes your taste buds EXPLODE!
Fulvio and Katia are genuinely outgoing, joyful people who want to learn about you, but also are willing to chat about their country, their culture, their interests.
I highly, highly recommend spending time at II Vicario to enjoy learning about the Tuscan cooking ways!

We had a fabulous experience cooking with Katia! She made us feel right at home and had such a great sense of humor. We felt like part of her family as we sat down and hand made our own pasta. She included all of us in the process of making 2 different pasta dishes, bruschetta, and a chicken skewer w/prosciutto. This was truly a highlight of our family trip to Tuscany!

We enjoyed this cooking class and learned much. There were around 10 or 12 participants. Chef Fulvio was a great teacher. I was impressed with the fact that Chef Fulvio focused on technique as opposed to recipes. Although he e-mailed recipes after the class. I that e-mail he did not include exact amounts of ingredients, because he believes that every time a dish is prepared, it should be prepared in the moment. Chef Fulvio's passion for cooking as an art was obvious throughout the class.
We started by making pasta. we learned the technique of hand rolling pasta, We then moved on to Bruschetta. It was interesting to learn that Just rubbing a clove of garlic on bread - made great garlic bread. As we went through each item, we picked up other cooking techniques. We also learned that Tuscan cooking is focused on simple and fresh ingredients. After cooking we all sat down to enjoy the meal with wine parings. I highly recommend this class.
