      Fantastico
Nomad Cook (Luis Hernandez) is a gifted teacher. He shares his wealth of information in interesting and understandable talks as students chop and stir per his instructions. All questions were addressed, all individuals were expertly included in the group. Luis provided a good learning experience with some extremely good foods that we made in his kitchen and then experienced from local families on the Markets Tour. His information and passion for local food crops inspired me to find and plant native corn here in Nuevo Mexico.

A most lasting impression of culture, community and food as medicine, history & community
To me, this is one of the top highlights of our trip. Luis is such a profoundly dedicated man to traditional food, how each ingredient is prepared and cooked to bring out its optimum, inherent medicinal purpose. You can feel his passion and respect that runs so deep. To learn of food that equates culture, history, community, politics all that cannot be separated from its life force and ancestry, is so vital to know and to feel. The food was so fresh and alive from choosing its ingredients from the local market as he shares stories, to preparing it slowly and mindfully with love and respect, to its end result of sitting together and enjoying the feast that we all created together. What a beautiful cultural experience, one that has stayed with me days later and one that I know made an imprint in me forever more. Thank you Luis. Cannot recommend Tortillas, Nixtamal and Salsa workshop enough. I look forward to bringing my husband within the year to meet you and to be fortunate enough to come again.

Delicious, interesting and super thorough cooking class in Oaxaca
Well, that was a great experience! Luis’s cooking class was fun, super well organized, full of interesting information, and to top it off delicious (I can’t believe how many different things we made and ate!). We started off in the market where we did a bit of an impromptu tour, we bought “groceries” from various local vendors - each accompanied by an interesting story. Come to think of it, now that I’m trying to write a review, there were so many different elements, tastes, quick trips, unscripted moments throughout our day they’re really too many to mention. I’ll put it this way to summarize: that was my very first cooking class, and I learned far more than I ever thought I would have, and enjoyed it so much! The time flew by. I would definitely recommend this class for anyone interested in having an authentic, culturally sensitive, detailed & delicious experience. *side note ~ I was super impressed that Luis brought along his own containers and utensils, in order to not create unnecessary waste when buying our supplies for the class. I ended the afternoon having a clear conscious and feeling proud that I participated in Luis’s class. (not to mention a very full tummy) gracias Luis!🙏🏽

      Holy Mole!
What an AMAZING experience! There is no better way to experience the flavors of Oaxaca than by taking a cooking class with Nomad Cook. The proprietor, Luis, met us at a local market where we shopped and learned about all of the ingredients necessary to make a mole negro and mole verde. From there we went to the studio where we prepped and cooked and chatted about the history of mole and Mexican cuisine in general. Not only did we learn how to prepare these fabulous dishes, but we then got to eat them! Best mole negro ever!! We will certainly return to Oaxaca and when we do we’ll be sure to sign up for another session. Highly recommended.

Fabulous participatory cooking lesson and meal
Luis, the Nomad Cook, is a fabulous person, teacher and chef. The class is small, interactive/participative and he helped us understand more about local culture, food and issues. He is kind, interesting, and the experience is truly great.

A wonderful way to learn traditional Oaxacan cuisine, Nixtamal & tortillas.
This was an incredible class and experience. Nomad Cook knows their stuff and it was so helpful to learn about the history, culture and technique of Oaxacan cuisine including the amazing, almost sacred process of Nixtamal, Masa, and tortillas. We also learned about ingredients by touring the very non touristy Mercado Merced, stopped for Oaxacan ice cream from a local street vendor, and went to a community mill to have our Nixtamal ground into masa. We made a huge lunch too with fresh made blue corn tortillas we made, and made several salsas, salads & side dishes as well as Quesadillas. This was traditional, fresh, healthy food that's also vegetarian and vegan friendly. This is a smaller company so you’ll have a more intimate, hands on experience. It’s also right in the Centro district so unlike some other classes you won’t spend time on a bus driving to and from a cooking school outside of town, which is a great option: Highly recommend Nomad Cook!

      Truly enjoyable experience
Luis is a very personable guy and he’s also a good teacher with an easy going personality. He customized the class to our needs, vegan and vegetarian. His place has a lot of charm and he cares deeply about the culture and the environment. The market shopping was exiting and the final meal delicious

Such a great experience! From shopping at the market, to visiting the mill, to making the tortillas themselves, it was all very interesting and really fun. The food was excellent and we now have some great recipes to use. Luis is a great cooking instructor. Highly recommended!

Tortillas like you've most likely never had them
The title containing "tortillas" is what caught my eye and the experience Luis provided did not disappoint! But, wait, there's more. Salsas and guacamole and a wonderful soup. And, you create it all with Luis by your side guiding and couching. An absolutely wonderful way to spend a morning.

Luis was very friendly (English speaking) Mexican guy, who made our day great! We started at the local market and then cook all the delicious food in his place. If you want to go deeper into the Mexican culture and cuisine we would reccomend this class 100%! 🙂

My husband and I had a great experience with Luis’ vegetarian cooking class. Luis is a natural teacher: patient, clear, and creative. We made delicious dishes to share and learned about new flavors and techniques that have expanded our tastes and appreciation for Mexican cooking. We were especially delighted that Luis was open to adding a component of the class that focused on fruits, since there are many new (and to us, exotic) fruits to be found in the markets in Oaxaca. We tasted a variety of new fruits, which was a highlight of the class. We would recommend this class to anyone with an interest in Oaxacan vegetarian foods and learning to prepare them in a comfortable, friendly setting. Thank you, Luis, for a memorable afternoon!

Wow! We had such a good time with Luis, he met us at the mercado, treated us to hot chocolate and traditional Mexican pastries and then we followed him as he shopped for the ingredients we would need to create our feast, a vegetarian feast per our request. His positivity and love for food made the adventure great fun. We even got to see our corn being stoneground which we then used to make homemade tortillas! After shopping we proceeded to make (and eat) a delicious meal with Luis's tutelage. Our group of 4, 2 adults and 2 teenagers had a blast. We highly recommend.

Fantastic experience! We (3 people) spent 5 hours with Luis, starting in the market and moving to a simple and well equipped kitchen to make 2 vegetarian moles, 2 snacks, chocolate milk and traditional bread.

The class was a great mix of structure and ad hoc instruction. More like cooking with a friend than a teacher. Luis is a great conversationalist about Mexico and many things abroad.

We would gladly return for another class. Or the mole again - it was delicious!

I would highly recommend this class to anyone visiting Oaxaca City! You will come away with real cooking skills as well as a deeper understanding and appreciation of the place you are visiting.

This class starts with a shopping trip of a local market, where Luis talks about the kinds of ingredients we will be using, and their importance and significance in Oaxacan cuisine. The cooking portion of the class occurs back at Luis's kitchen, and is very interactive.  We were  chopping vegetables, mixing ingredients, and charring chillies while Luis carefully explained the methods and reasons behind everything we were doing. There was even a trip to a local mill to mix our mole which I found super interesting. We learned not only the process of making mole, but also the history of the dish and its many iterations throughout the years.

The class ends by eating our homemade lunch outside in Luis's garden, surrounded by his herb and vegetable plants, chatting about the history, politics, food, and culture of Oaxaca.

Making mole is a very complex and lengthy process, and Luis made the whole day fun and light. He is a natural teacher with a true love of food, and his patience and humor made the  process simple for even a beginner like me. I will definitely take more of his classes on my next trip to Oaxaca!

We met Luis en el mercado and he was immediately warm and explained all of the purchases, introducing us to the vendors. After the market, we walked to the cooking space and it was comfortable and clean. Luis put on some music and the experience felt more like cooking with friends than strangers, as we chatted and prepped food. We learned how to make many vegetarian dishes, and Luis paid attention to our likes and curiosities as we prepared the menu and began to cook together. Along the way we learned so much about Oaxacan history, specific ingredients and their availability, and Spanish words and sayings. Some of the techniques were a challenge (like deep frying stuffed peppers) but Luis demonstrated, coached, and cheered us on. You will not be pressured to be a flawless cook.

Come to class with an appetite because Luis build in time to try snacks and courses throughout the experience. You will not be disappointed! Everything was delicious!

We elected to try the class in Spanish, but Luis is completely bilingual and used English to help us when we did not understand.

I'm so glad we arranged a cooking adventure with Luis! He's a remarkable guy, very knowledgeable and enthusiastic. Totally recommend! We bought ingredients at the local market, and went back to his studio to prepare the meal, and then ate up a wonderful lunch. The kitchen is not all glossy and prepared for tourists, it's the work space of his house. This makes it all the more memorable and local. This was a highlight of our trip. Highly recommended!

I really loved this class with Luis! He was so kind and knowledgeable. We made so much food that I needed a nap afterwards. The meals we made were delicious, and I also had a chance to practice my Spanish with him. He gave me lots of good recommendations for things to do in Oaxaca while visiting. I would definitely take another class with him. If you are coming to Oaxaca, you should add this to your itinerary.

Luis’ class was an awesome culinary experience which I’ve highly recommended to friends visiting Oaxaca. Our day included a fun trip to a local market to pick ingredients as well as a visit to the neighborhood grinding mill. The class was highly informative and very much a hands-on experience. Luis’ class provided for a very fun day and I will definitely be taking one of his other class offerings on my next visit to Oaxaca.

My friends and I had an amazing time at Luis' cooking class! I appreciated how hands-on the experience was, we really learned techniques that we could use at home in our own kitchens. The food was delicious, so flavorful, and we even made tortillas from scratch (including nixtamalization of the corn!) We also went to the market, took mini field trips around the neighborhood, and discussed regional culture and food systems. I would definitely recommend this class and would like to take another workshop from Nomad Cook in the future!
