About
Casa Crespo is Oaxaca in its kitchen. Tradition lives there, where chef Oscar Carrizosa, (originally from the Mixteca region) mixes the ingredients of the 16 ethnicities of Oaxaca with the original seasoning that he inherited from his grandma. It´s the perfect place to get to know the flavors and aromas of Oaxacan food in the classes that Oscar gives. To taste a good cup of coffee or a hot chocolate at Casa Crespo while getting ready for your market tour is also a good start to approach Oaxacan cuisine. Oscar, who is very friendly, also shows how to smell and identify the aromas that come of the dishes. He presents menu options and the students decide what they would like to cook. There is no fixed menu. He teaches how to cook 3 types of tortillas, 3 types of salsa, an appetizer, soup, mole, dessert and drink. Dishes that strive to remain in the taste buds and memory of those who love good eating.

What to expect
During the classes, everyone actively participates. The classes are not designed to simply observe and listen. There is a lot of work to be done: dice vegetables, peel seeds, fry, season, grind and sing…if you like. And nobody washes dishes. There are also vegetarian options to cook as well or dishes for special dietary restrictions. The class follows along with the chosen menu. The classes can be given in English or Spanish, depending on the group´s preference.

My husband and I had a wonderful time. I liked that Oscar asked each person regarding allergies and food preferences and spontaneously created a delightful, delicious and beautiful menu.
We all walked together to the market to buy the ingredients. What a good experience!
He made sure each person had a chance to contribute to creating every dish, eg chopping, mixing, pouring. It never felt intimidating. The 7 of us quickly developed camaraderie.
We all sat down to a visual and tasty midday banquet. We were offered mezcal and beer and non alcoholic beverages.
Oscar had very attentive staff who kept everything moving and the working areas clean and tidy. And while cooking, he made sure everyone wore masks that covered their nose.
A wonderful experience that helps you understand what goes behind making moles, tortillas, and salsas.

My wife signed my friend and I up for Oscar’s class to get us out of her hair while she got some things done in the City. What a pleasant surprise! After meeting Oscar in his charming kitchen we went on a walk to the market where we purchased all the fresh ingredients for our meals we would prepare. The vibrant colors and Oscars explanations about the culture and cuisine of Oaxaca made it a very personal experience.

Hands on instructions and interactive participation was part of the process. The result was a wonderful selection of salsas, mole, soups, and a plethora of flavors. Accompanied by a selection of beer, wine, and mescal. A wonderful way to spend the day on Oaxaca. BTW, don’t forget to purchase a bag full of his chocolate! I made the mistake of only purchasing a couple of the many flavors offered. They taste great in my morning coffee!

An Unforgettable Experience and an Amazing Meal

Oscar and the Casa Crespo team were incredible. If you want to have a fantastic experience in Oaxaca with your family or friends, book this experience. We still remember this as the best meal we ate during our 1-week trip to Oaxaca, and the most fun we had by working together to create it.

A Must-Do for Amateur Chefs, and the Rest of Us
This was an amazing culinary experience! A must-do on your trip to Oaxaca. First, our group (a variety of tourists with culinary interests) sat around a table in a beautiful courtyard to collectively decide what we were going to make, based on options the instructor gave us. We ended up making 3 different kinds of salsas, homemade tortillas, 2 kinds of mole, chile rellenos, ceviche, squash blossom soup, crab empanadas and 2 flavors of ice cream. Everyone got to pick something that interested them. We then toured the local market with our instructor, a native, and learned about the different fruits, vegetables, herbs, meats & cheeses that are used in Oaxacan dishes, and we bought the ingredients for our meal. Back in the kitchen, I was amazed how the instructor took us through 8 or so dishes in a relaxed, organized manner (trying to cook 8 or so courses at home, I'd likely be setting something on fire). We got to ask questions, chop, blend, & stir while we watched the many dishes come to life. At the end of a few hours of hard work & learning, we sat down in the courtyard, back where we started the day, to enjoy this lovely meal with our group. My favorite part was learning how to use dried chiles in the moles and for chile rellenos. The dish I found surprisingly delicious was the squash blossom soup. I bought lots of local chocolate and dried chiles to bring home to try and recreate these Oaxacan dishes! We were also emailed the recipes, which will be an immense help. They sell an impressive selection of the local chocolates here at Casa Crespo, for 40-60 peso each, which are about the size of hockey puck. I may have bought 10 of them! I easily got a cab ride here & back for 70 pesos each way, but if you are staying in the central tourist district you can probably walk it in 15-20 minutes.

Oscar’s class was an amazing experience. It was great to go to the market with him and learn about all the local food and veggies. Having someone knowledgeable like Oscar is absolutely essential to understanding what is going on in the market and how to navigate it. Not only did we get to learn about different food, but we also got to cook it later on! The kitchen we cooked in was homey and felt very traditional. Oscar walked us through the different recipes and taught us how to do so many things! Then, the best part, the food is AMAZING. This is an essential experience for anyone looking to dive into the Oaxaqueño culture!

Wonderful Cultural Experience

This is such a wonderful way to be introduced to the Oaxacan cuisine. As a participant, you're allowed to give input as to what the menu for your class will be. And then Chef Oscar takes you to a local market and explains all of the ingredients as well as the produce being sold in the stalls. That part alone was worth the price of admission! The cooking part of the class is informative and engaging and, for those of us with just average cooking skills, not at all scary. Everything that we made--and we made a LOT--was totally delicious. I thought that the squash blossom tamales were especially wonderful and I'm going to try to reproduce those at home. We also made an avocado soup that could not have been simpler to create and was so flavorful. I can't recommend this experience more. Thanks, Chef Oscar!!!

Fresh and amazing

Chef Oscar gave me and our group the Oaxacan experience I was searching for. It’s paramount to know the ingredients and tour the market that we almost didn’t make...we were late. Luckily there was a very sweet and friendly lady that took us to the market and we were just in time. Knowing the ingredients and their origins was such a special experience. Not only do you pick up your ingredients fresh at the market but then you are able to make so many items as a group without wasting any time. I encourage you to have breakfast because there was no tasting as you go. The techniques and applications were very approachable and so were the tasks. Everyone was able to participate. There are many items to be made so it’s a team effort to be able to create all of them. My favorite was making the tortillas fresh since I never have before. The obvious treat was sitting down at a beautifully decorated table custom glasses custom plates and then enjoy the fresh food bought and made the same day. The mole won’t be as layered due to time but the outcome was still delicious. The best part is creating something out of nothing, and then sharing this experience with your peers, and knowing you were part of this wonderful meal. At the end of my time in Oaxaca it’s still one of my favorite meals. It’s probably because I am a chef and nothing feels better than creating food and sharing it with good company. I highly recommend this culinary adventure. Take videos take notes ask questions and go to casa crespo!!! Chef Oscar and the team are such great hosts and facilitators for a wonderful experience.

A Wonderful Educational Market Tour and Authentic Cooking Experience.

Oscar was exceptional and very kind. We met as far as I know at his place of business and his home and we walked a distance to the local market. It was a wonderful experience also getting to see some of the city and walking with a local.

The market tour was brief but very informative he picked up some items that we were going to use for the recipes.

I chose to make a fruit mole because I'm used to eating chocolate mole in Texas, so I wanted to try something different.

Oscar welcomed me into his kitchen and every dish that we created together was simply divine.
One doesn't have to know much about cooking, Oscar is there every step of the way and makes it fun because you're learning with ingredients most people don't use, like chiquitanas, a large flying ant.

I would definitely book again.
