Elsa, Marcela and Andrea are warm and friendly hosts who welcome you like family into their traditional Cholula home. Elsa and her daughters, Marcela and Andrea, run a culinary workshop which offers homecooked meals to local office workers who don't have time to cook for themselves, cooking and baking classes and catering. Andrea is a professionally trained chef while Elsa and Marcela are both home taught. When he's home Elsa's husband will also join you - he loves to cook as much as his wife and daughters!
Join your hosts in their quaint kitchen for a hands-on cooking lesson. You will learn to make 2-3 typical Mexican dishes which will be served with additional dishes that have been prepared in advance. You can expect the cooking lesson to last about 1-2 hours.Â
Your meal will start with an appetizer, perhaps their homemade pico de gallo con chicharrÃ³n (fresh tomato, onion and chile salsa with fried pork belly, served on a tortilla). The main meal will feature typical dishes such as the famous mole poblano (a thick dark sauce made of chiles, chocolate, banana, raisins, nuts, and tomatoes, blended with spices and served over chicken), a fresh soup such as crema de calabaza (cream of zucchini), pan de elote con rajas a la crema (homemade cornbread with mild peppers cooked in cream), cemitas (a sandwich of a breaded meat cutlet, cheese, avocado, and chiles served on a special Pueblan bread topped with sesame seeds) or pelona (a moist bread stuffed with meat, avocado, lettuce, salsa and sour cream, and then fried). For dessert they serve home-style sweets such as camote (slowly stewed sweet potatoes cooked in raw sugar), arroz con leche (rice pudding), or perhaps tortitas de Santa Clara, a Pueblan speciality cookie filled with frosting made of ground pumpkin seeds.
