Explanations of the ingredients that we were using were in enlightening. We not only learned a little about cooking but about history. The trip out to the cooking school was interesting. It’s always fun to be able to see some of the countryside. We got a good variety of tastes because each team made a different flavor of the same item. The meal that we shared was delicious. Jane, with assistance from her “sous chef” Irma, showed the four of us how do make mole (black & yellow), which we had for lunch along with rice and tortillas (also made by us). Delicious! Jane’s humour and insights into food and Mexican history and society alongside the kitchen instruction made for a most entertaining morning. Even though we’ve completed all of Jane’s classes over the years, I suspect we’ll sign up for a refresher when next we visit the Huatulco area. Thank you, Jane!Written February 6, 2025

Benjamin was knowledgeable, humorous, helpful and a delight. Bring your appetite - - that taco shop will fill your belly to the max! Many fun treats throughout, with an entertaining mezcal flight tasting as the finale. Our morning flew by! And that Oaxacan cheese - - SO GOOD. She immediately set the tone for a day of conversation, food exploration, cooking techniques and cultural awareness. Ceviche; shrimp mousse; baked rosemary shrimp; Baja fish tacos; homemade dipping chips; hibiscus iced tea left us all VERY full with great food and limitless information and resources. Ohhh, the benefit of living oceanside near fresh fish! - yet, the class explained how frozen fish can also be used. DEELISH. Jane was prepared for the classes- had all ingredients prepared and demonstrated techniques required for each dish. I learned a lot about the peppers and chili's, so now I can adjust it to my liking. I really liked the 2 different kinds of ceviche- it was great to taste how they were similar but different. I also liked the shrimp 🍤 dish, it was easy to prepare. The fish Tacos were great. The shrimp mousse was great but I would not prepare it at home- I hate using my blender(do not have a food processor) it's too much work to clean it afterwards. So she is considered a real local to the Hualtuco community. Her background and education in women’s history and Mexican culture shines through in the experience she creates for her guests. Over 8-9 courses we had multiple indigenous foods from the area and specialties we would have never experienced otherwise. Jane is extremely passionate about the earth and how our food is sourced. This is a dining experience like NO other. Jane is the most welcoming, friendly, warm host and she invites you on a journey to connect with her local village and the community through food. Her passion for the area and its culture was truly evident and infectious. A key highlight was visiting the local markets, which provided invaluable insight into where to purchase fresh, authentic ingredients. We highly recommend taking this tour early in your trip to capitalize on this knowledge. The tour's location around the main square also makes it easily accessible for those with mobility limitations. We thoroughly enjoyed our experience and are already planning to return for the morning tour. I arranged this tour with Jane as soon as we knew our ship would dock in Huatulco and we're so glad we did. We were met at the dock and driven to Jane's Cooking Classroom which was in an incredibly beautiful setting about 20 minutes outside of town. The space was great and the class superb. Jane answered all our questions and was an excellent teacher. We've taken cooking classes before and have always enjoyed them. This class went a bit beyond our usual experience as we learned so much about the area and the people. If you are in this part of Mexico - BOOK A CLASS - you will learn so much more than how to cook wonderful food. Our class had 8 people so book early - you won't be disappointed! Thank you Jane!

Another great cooking class with Jane at Chile's and Chocolate Cooking School in the little town of Zimitan. (transportation included)This class "Pigs and Rum" was a hands-on exploration of pibil cochinita-- pork stewed with onions, tomatoes ,citrus and spices, wrapped in a banana leaf which we cut fresh from a banana tree. We made a nopal and radish salad and fresh corn fritters. Jane not only helps us prepare the food but instructs us about the history of the food. The best part is sitting overlooking the river and enjoying the food we prepared. A great date with my husband, with great food. Met the nicest people. Can't wait for the next new class. Oh forgot the rum in the horchata. (rice water). Refreshing!!!

This was a wonderful experience and we're so glad we were part of it!
Jane is so talented not only as a chef but as an instructor (very patient!)
We were glad she was so informative about the culture, food, and traditions of the people in the area. Will certainly return for another cooking school adventure when we plan our next trip there. Also, be sure to visit her restaurant, Cafe Juanita, in Tongalunda as well!

Was a very unique and memorable experience with friends. Jane was an exceptional teacher and I enjoyed her history of the food and Mexico in general. The food was easy to prepare and delicious. I will be making these dishes to share with my friends and family.

Jane and her assistant were top notch! Our group of 4 were picked up by taxi at the hotel and taken to the classroom (arranged by Jane). The 30 min drive was lovely, enabling us to see the countryside. The class itself was great fun and the meal that we prepared was delish! Besides learning how to prepare some authentic dishes from the region we were also provided some interesting history of the area which was a great addition to the overall success of the tour. Certainly not the usual tour that one might book for a beach vacation but I highly recommend it. I suggest a stop at the local grocery store to grab any items that you might not be able to get at home, as you are sure to try the recipes again. The rest of the group was disappointed that they did not attend this adventure so a stop at Juanita's Cafe gave them a taste of the foods Jane creates. Thanks again Jane.
