Mongolian stir-fry restaurants use an interactive cooking style. Your server gives you a bowl which you take through the food buffet line. You put meat in the bowl, then season it with spices, add veggies and other items like cilantro or onions and peppers. Then you either put sauce on it or put the sauce in a smaller bowl and then you give your creation to the cook or grillmaster.
The grillmaster cooks the food on a 6' or 7' round flat-top grill with the meat towards the middle of the grill which is hotter and the veggies at the outer edge where it is cooler so they stay crisp. You get total control over your meal because you get to choose what goes into it.
