For those who don't want to sign up for a week of cooking, or even a full day, then here are a couple of excellent options:

 

 

Both of these run excellent hands-on 1/2 day and 1-day classes and charge reasonable prices. 

 

Mama Gabriella (MAMA G), is based just out side the roman spa town of Bagna di Lucca. She describes her cooking classes as more akin to cooking experiences in her real' italian kitchen!

Guests take part in the the cooking courses and then eat a full dinner with Mama G.You can't get more Italian that that! If you prefer small classes then she won't have more than 4 people at a time and only people that know each other. In other words, if only 2 of you want to be on a course, then she will limit the days experience to just the two of you. She will even do one to one courses. Book well in advance. Limits her experiences to one per week.Will also do Gluten free dishes. Also rents out property in this area, away from the tourist crowds. No fancy website, no number to call. Just an email.
