Try taking one of the kayaking ecotours during your visit.  They pick you up and dropped you off at your hotel promptly.  Kayaks are good quality and are in good shape.  This is a good full tour by knowledgeable guide.  A fun thing to do.  You go through the mangrove swamps, along various shore lines, and over to some of the small Cays.

Note this is probably not the right thing for you to do if you are not a physical type.  You cover a reasonable amount of ground, so there is a reasonable amount of paddling to do.  If the wind and current are against you, you might get a good workout.

Another note.  You visit Iguana Island on this tour, and on some of the snorkeling tours (they like to put ashore on the sand bar connecting Iguana to the next island), so you don't need to do one of the tours that takes you there.
