Some say vegetarian food is very easy to find in Negril, but those people may not be vegetarians. Cabbage and carrots are very popular in Jamaica, and vegetarian food often consists of that, such as a cabbage and carrots topped pizza as a "veggie pizza" or cabbage and carrots with noodles as a "veggie chow mein."  The Hungry Lion, in the West End, has good vegetarian selections, and generally good food.  In addition, if you call them, they'll send a free shuttle to pick you up and take you home, saving a fair amount of money.  Kuyaba also has good food and good veggie selections, and also has a free shuttle.  Negril Treehouse has some vegetarian Chinese options which are okay, but not exceptional. Right next to Norma's is a little pattie shop, easy to miss behind some souvenir stands, which has veggie patties which as tasty and cheap.  Also note that in Jamaica many people think vegetarian means someone who eats fish (a pescatarian, not vegetarian).  Telling them that no vegetarian organization in the world includes eating fish will not get you far.  Despite insisting that you do not eat animals you may have to go through each one, such as "Well do you eat octopus?" and "What about snapper?"  Be patient.  Generally, ask to see a menu before you sit down.  If it doesn't have an entirely vegetarian option already on the menu, don't eat there.  You will have great difficulty getting them to remove the meat from a dish or make something special for you.  However, you will be able to find plenty of places that provide something, although it may not always be what you were looking for.  There is a true find Vegan/Ital the real thing on the West End across from The Blue Cave Castle called The Original Rough House Health Food and Juice Lab. They use no salt only wet sweeteners. They have a website with a thier full menu. Check it out and remember One Love.
