We just stopped for a hot coffee on our way to Mae Hong Son from Mae Chaem. It's one of the only places to stop on that route - about 20km from Mae Chaem. The cappuccinos were great and the setting is fantastic. The rooms overlook the river and it's surrounded by jungle with everything crafted in bamboo.
The menu has lots of coffee options and about five dishes to choose from. Plus there's a small shop stall with handmade scarfs and things too.
You could definitely spend a few nights there overlooking the river and relaxing - a great little gem on a long windy road.
