I'm a big fan of Bubba's American Bar and Grill. I live in the United States and have a second home on Koh Samui, and now try to make a stop at Bubbas every time I pass through Koh Samui. For those who have been on the island, Bubba's is in the site that used used to be Coyotes, but while Coyote's drinks were great the food wasn't as good.
First, the food at Bubba's.... The slow cooked Ribs are great---and the portion is HUGE and the and it comes with a great bbq sauce. This is probably my favorite thing on the menu and we make sure that someone at the table orders it every time we go in. I can often eat a full rack at most rib joints, but at Bubba's, I suggest you might want to share it as the portion is so big (although--if no one was looking and I didn't feel embarrassed I could go right through an entire rack). The macaroni and cheese and cole slaw that accompany it are also very good. Also, try the potato chips---they're freshly made and we always order at least one basket--they're soft in the center and hard on the outside.
I also love the "best ever tuna melt" and it's great to order the Reuben and find a great thousand island dressing that accompanies it--hard to find. The Patty Melt is also excellent and the bread they use is great---not always easy to find in these parts. There's a lot more on the menu but I never seem to get to taste them as I keep eating the same thing over and over again when I go to Bubba's.
The drinks are extremely reasonable---try the Butterscotch Margarita. I think it's 99 Baht.
The restaurant has seating inside and outside---we like outside as it's great people watching. And they just added a lot of TV's---filled with different sports channels.
This restaurant has no pretense. Good, friendly service also. There was one waitress who didn't smile much, but she's no longer there :) And they have live music some nights (and it's good).
In the eight or nine times I've been there I was literally disappointed just once---and that's when I had a craving for a Reuben and the corned beef had run out. And one other time the cole slaw was a bit too gooey---but that was it.
