We visited Cabo at the Viceroy with our friends for Valentine's Day. The Viceroy is simply an amazing property, and we often have drinks at the Sunset Lounge (which we love). We decided to try out Coba for the special night. The restaurant itself is visually quite stunning and impressive, with large open spaces and modern decor. The meal offering that evening was prix fixe, so there were very limited choices for my non-seafood eating husband, but the kitchen did try to accomodate him, which we appreciated. That said, and it may be due to the fact that it was a very busy night due to Valentine's Day, but service was rather unpolished (perhaps untrained?) and our experience was only fair at best. Additionally, we were a table of 4 rather lost amidst numerous tables of 8 or more, and while wait staff were swirling around those tables frequently, it took a very long time (maybe 20 minutes?) for anyone to pay attention to us to take our initial drink order, and then we waited for someone to take our meal orders. We felt completely ignored. I think the wait staff finally realized that we were being neglected, and to their credit, tried to make up for this by paying closer attention to us for the remainder of our meal. Regardless of our highly disappointing service experience, our meals were excellent (my scallops were to die for!) and it was mostly a lovely dinner.
