I've had the pleasure of visiting this understated trattoria several times over the last six years. Unequivocally, this is one of the best dining experiences you'll have in Central Italy.
The proprietor/chef is a master of his craft. While the dishes have a local flavor, he transforms them into creations that are his very own. There is an established menu that offers a selection of grilled meats, pastas and vegetable sides, but the chef will suggest variations that represent his unique interpretations. Just let him be your guide, and you won't be disappointed. Whether it's a chicken or wild boar sauteed in a spirit, a ragout, a pasta dressed in the freshest peppery tomato sauce or an impeccably prepared side, you can't go wrong. All base preparations are home made, and absolutely nothing is re-constituted or warmed in a microwave. The chef is also very knowledgeable of local and regional wines and will happily suggest one that's both fairly priced and complimentary to your meal.
The restaurant is on the ground floor of an old building and has been carefully restored and modernized, though in a way that's consistent with the original architecture. The fireplace in the cozy dining room (seats approximately 25) has been colorfully decorated by a local artist. The entire place has the feel of someone's home, not an impersonal commercial establishment.
Il Cassero offers the kind of dining experience most travelers hope for but few find. I recommend it with some reservation, because I like to keep out-of-the-way places like this to myself. However, I so enjoy the proprietor and his family that I'll do what I can to help them succeed. This is a great place, and you shouldn't miss it if you have the opportunity.
