We recently stayed at the Sofitel Macau at Ponte 16 and enjoyed a most delightful dinner at their signature restaurant called Privé. This is a French boutique restaurant offering an intimate dining experience, featuring a a short yet specialised menu with excellent French cuisine.
There are only 6-7 tables available in the restaurant so dining is limited to a handful of diners each evening. We were lucky to secure a reservation the morning of our meal, won't risk doing this next time around and will make reservations in advance.
Our meal started with a prawn and seafood based amuse bouche, which was expectedly light and tasty, properly wetting our appetite for later courses that wouldn't disappoint. This was followed by our appetiser, a goose liver terrine topped with a layer of raspberry gel and served with a nice marmalade w/ raspberry. The terrine was attractive, compact yet silky in texture and tasted lovely (rating 4 of 5).
Next, we were served mains, which were splendid, easily of Michelin Star quality. We tried the French Milk Veal. This included two beautiful and delicious mignon cuts, served in light beef juice, surrounded by gnocchi covered a white cream sauce. The gnocchi was good, providing a tempered balance to the excellently prepared veal. The veal itself was succulent, with an almost buttery texture and very tasty. This was a very well executed main that we would gladly repeat order (rating 4.5 of 5).
We also tried the Rabbit Saddle Farcie, served with a thin slice of rich Beaufort cheese, a carrot pure and creamy polenta. The rabbit was very well-prepared with a drier outer layer while the inner meat remained soft and tender. The dish was was also as beautiful as it was tasty, just sublime. Little to say actually, just a superb dish, all the way around (rating 5 of 5), another we would happily reorder, time and time agin.
For wine, our waiter recommended a particular Cabernet Sauvignon that we were a bit surprised about. It was a decent wine but lacked the sophistication and fullness of the wines we are normally suggested when dining at finer restaurants. Nevertheless, it was ok with the terrin and the two mains so we had no real complaints.
Being particularly happy with our appetiser and mains, we elected to try two desserts on the evening. The first was the chocolate mouse served with a vanilla ice-cream. The mouse was quite airy and soft, having cake like texture. It was served with a vanilla ice-cream, served on top. This dessert was a safe choice, being less-sophisticated than other dishes tried on the night and it tasted good (rating 3 of 5).
We also tried the deconstructed pineapple dessert with truffle that was another stellar dish at Privé. This was lovely concoction that was creatively designed, making various uses of the pineapple fruit. This was an exciting choice and the taste delivered, another great dish (rating 5 of 5).
We topped off the evening with delightful plate of sweets along with a glass of Muscat/ Sauvignon blend, ending a most enjoyable meal at Privé.
In the end, this was an excellent meal, rivalling anything we've had in Macau or Hong Kong in recent years. We look forward to having a follow up meal at Privé. At this time, Privé is an easy restaurant recommendation for visitors to Macau.
