Yama is tucked away in the corner of a small strip mall in Vienna. We normally choose the sushi bar, so that we can see what looks good and order accordingly. the food has been consistenely very good. (While this is my first review of the place, we have eaten there over a dozen times, since it is local.)
No, you won't get the "melt-in-your-mouth" experience of the stalls in Tokyo that are in the Tsukiji market, but you will get very well cared-for fish, that is generally well prepared. Similarly, you won't find someone who has apprenticed for twenty years before being allowed to season the rice, but for Virginia, it is as good as it gets.
