Let me start by saying that my wife and I have been coming to Hester's since it opened as we live in the neighborhood. We own homes in two states and the first place we always stopped on our return to Texas was Hester's. However, since none of the family members appear to work at the original location (Hannah used to be at the original location and the rest are out at the Art Museum) the service has become atrocious.
On Saturday, we arrived during a busy time (as usual) and were unable to find a place to sit. people behind us in line were taking seats and then getting in line. We informed the young man who took our order that there were no seats and he proceeded to heat up my wife's breakfast and hand it to her with coffee and said she could just wait a few minutes (apparently holding her food) and a table would "probably" open up. This type of short sighted customer service has become the norm at Hester's as the staff is so poorly trained. This one instance is just one of many that people in Corpus accept, but others would consider nothing short of ridiculous.
I write not to say that Hester's is a bad place, it is not. But it is not what it used to be and Richard and Hester need to reassess how they are running the original shop and get it back to the truly unique place it once was. Even to those of use who knew it when it was truly awesome.
My advice, train your people to use their heads, not be over managed and paralyzed. Make the service as good as the food or Hester's will simply be another place to eat, not the unique venue that it was envisioned to be.
