We happened into Kai Wailea late on a weeknight and were one of only a handful of tables. Our server was an engaging and attentive Russian kite-surfer. Food was unremarkable. The crab and crab roll was one of those things with too much sauce and too many ingredients, the end result being a sweet, incoherent taste. The tuna roll was the best of the sushi, but overall the ngiri sushi and sashimi were just relatively bland.
I have a lingering sense that there is something about warm-water fish that makes them less firm and less distinctive in their flavor than fish from colder waters. I have no scientific basis for this, but I have yet -- even at supposedly top-end sushi bars -- to get really good-quality fish in the Islands.
