I stayed here in for about 10 days in July 2012 with a group of friends. It's a beautiful place and I would highly recommend it. Rolando and Maria are terrific hosts. It's a little tricky to find. Take the 2nd exit for Granada if travelling from Malaga/Granada. The cave appartments are off the road on a gravel track.
The caves are carved from the mountain. Most of the work was done by the Maria and Rollando. It overlooks the town and it's so peaceful a night. There's a nice pool and hot tub and enough cooking facilities to cook your meals. The real selling point of this gem is that is unique in a world where it's hard to travel without staying in a hotel chain. Cuevas de Rollando is typical of the area and it has character that's hard to find.
