We tried Salt on a weekday late-afternoon during our visit to Omaha. The bar was very busy with the post-work crowd. The atmosphere seemed geared to the young working professional crowd, although a couple of families were also dining there. The food was very good with decent service. The noise level is a problem. Even though the restaurant was not packed, it was hard to hear across the table. Having a conversation was difficult. While the food was quite good and reasonably priced, we probably wouldn't go back because of the noise level.
