“Great lunch!”

Stopped in for lunch while touring historic Fredericksburg, VA. I had the Caprese Salad and a bowl of corn chowder. My husband had the chowder and oyster po' boy sandwich. The food was excellent--fresh ingredients. Service was wonderful as well.

We were two couples in search of a table on a busy spring Saturday evening, without reservations. Surprisingly, Bistro Bethem accommodated us [it took some rearranging on their part] and a fine evening resulted. The owner/chef made sure his customers were well-served and happy; he buys locally and healthily to the extent that he can and it shows. One of our group had a few rather serious dietary limitations and he innovated a bit on one of the evening's specials and it was wonderful [we all had a taste]. I had a steak and it was clearly high quality, and well prepared. One of our party had salmon [on the evening special] and reported that it was "as good as you'd find in Seattle." The wine list was acceptable, and reasonably priced. The server was prepared to describe only a few of the offerings, and not always accurately [Torrontes from Salta, AR is not "on the dry side"], but the selection was extensive enough that we found two quite acceptable choices. We were 4 evenings in F'Burg, and the Bistro was the best choice among the other restaurants in which we dined; it is an establishment that would rate well in any market. When next in town, we'll return!

“Absolutely Delicious Meals”

I've been to Bistro Betham several times over the past two years, and the food is excellent every time. I even had their "sweet bread" appetizer last time based on the server's recommendation. Also excellent. The flavor combinations are exciting and the portions are perfect. Even the bread they serve as you wait is excellent - warm, homemade, and flavored perfectly. The restaurant's desserts are the only thing here that is not five stars. Perhaps after eating a perfect meal, I'm also anticipating something excellent for dessert. Instead the desserts are average, so now I just stop.

The vibe of this restaurant is great. The local artwork changes regularly so it keeps it exciting for semi frequent visitors.

Bistro Betham is the best restaurant in Fredericksburg.

“Praise Pays”

We visited this chef owned restaurant that i lavishly and rightly praised a few of years ago. After an eight hour drive from Beaufort, I felt we need a treat. And once again, we were not disappointed.

The Bistro is located in old Fredericksburg, which might as well be a million miles from I-95 rather than the actual two. It’s a casual place with local art for sale on the walls, a nice bar and tables outside as well as inside. And an open kitchen. It’s pretty packed on a Saturday evening.

My wife started with a lavender limoncello that she proclaimed delicious. I stuck with Definitive chardonnay ($41) which was nicely oaky. We got a nice table and the waiter thought that he had served us on our previous visit; what a memory. He said that they had saved us some squash blossoms ($13) from the previous night that were stuffed with a ricotta/pecorino/lemon mixture and tempura fried. Since I had mentioned enjoying them previously, they thought that we would enjoy them again…it doesn’t get much better than that.

We also had a sliced skirt steak ($23) that was sliced and stacked in the kitchen, not the usual meat slab presentation you usually get. It was perfectly medium rare and served with decadent blue cheese and bacon croquettes. A glass of Malbec ($7) was a perfect accompaniment. We also tried the scallop and shrimp sauté ($23) that also had a slice of pork belly (I asked our waiter not to hold back on that). Served with richly reduced pan juices and wilted greens, it was difficult to share.

The chef, Blake Bethem, came out to talk to us and other tables. He also poured water and bussed tables. An engaging guy. His line chefs were working their butts off in the small kitchen. Yet all our dishes came out in a timely fashion. Service was very attentive.

We finished with a shared crème brulee ($7). Perfectly classic.

And speaking of classics, don’t follow the Ventures advice, instead Run, Don’t Walk to this place as quickly as you can. Especially if you’re a tired traveler seeking real food away from the interstate chains.
