“good barbecue”

it is a good barbecue, but not the best! very quick the service, good the choise of the meal. It is nice the location, even if sometimes there is too much peolple inside!

“GREAT atmosphere and pretty good BBQ.”

The kids LOVED this place. There's a bear crawling up the wall and tons of animal mounts to look at. The BBQ was extremely decent. The brisket was good, although a little fatty, the chicken was tasty and the kids catfish was gobbled up. The coleslaw was fresh and the beans were okay. A little salty. We enjoyed pecan pie for dessert made from the pecan grove down the street and peach cobbler. The kids are asking to go back. We'll make a trip back and definitely come here again.

“Great Meal”

It is always a treat to find a great meal from a locally owned establishment while traveling. I tend to look for a full parking lot and this place had it. Get the combo plate. I substituted pork for ham. The tri tip was the most tender I have had and the hot link and pork were both excellent. The BBQ sauce was good and the hushpuppies were great. Basically everything was great. I am here a second night and will probably go back to back.

“REAL-DEAL BBQ IN CARLSBAD”

After a couple of back-to-back bad restaurant experiences in the booming oilfields, I was about to give up on finding a decent meal in this town. That was until tonight when I stopped in at the Red Chimney. It truly is THE BEST BBQ in Eddy Country...and perhaps in all of east New Mexico.

And don't be off-put by the 4-star rating on food...spoiled by the likes of the long-gone and legendary Brother Jacks in Knoxville and great places in Birmingham and Memphis, I am picky. So, when a BBQ restaurant gets 4 stars, it's truly earned it. This is Kentucky style BBQ, so Red Chimney does not dump a load of sticky sweet sauce on the meat. They use a less thick red sauce with a slight tart touch. Nice.

I had the combination plate (see photo below) featuring a smoked (and spicy!) sausage, ham, and brisket. It was clear all of the entrees were prepared from scratch, and NOT reheated after weeks in a freezer. Fresh grilled rolls, and honey, were another nice touch. Service was quick, friendly, but not intrusive. (There was nothing like the battle-axe manager that totally ruined a visit last month to another Carlsbad BBQ establishment.) The management appears to have the operation well-tuned and the staff well trained.

In the land of $300+ per night hotel rooms, at least restaurant food prices have not followed suit. The price for the full meal and two beverages (Diet Coke and red wine) was $22.50.

Bottom Line = The Red Chimney is a class act.

I really enjoy dining here. The pulled pork and ribs are very good. The staff is friendly and attentive. I go here whenever I am in town. The cole slaw is like mama used to make. Really!
