We ate twice at Longboards during a recent visit in Feb 2013, once for breakfast and once for lunch. The location is fabulous, right on the lagoon in front of the beach. We went down for breakfast on day one, and were able to watch whales from our table. The breakfast was a little pricey - $18 for hot and $15 for cold buffet, no a la carte option. Thin waxy paper napkins, melamine type mugs that were scratched (the sort you get on cheap cruises). Food was poor - scrambled egg had a grey tinge and everything was cold. We were advised that they would cook fresh eggs if you asked but I couldn't find anyone to ask.
We went back for lunch a few days later - mainly because the location was so good. Lunch was a little better. I had Teriyaki Chicken which was quite poor but the kids burgers looked better. Again the food was not hot.
It really would not take much effort to make this a much better experience. However, whenever we walked past the place was either full or had a wait so I guess there is no incentive.
After the second attempt we abandoned Longboards and walked down to Ama Ama in Disney, which was significantly better food for around the same price.
