The Flatbread Company is located in Paia, a busy town that is at the entrance to the famous Hana Drive that has challenged so many Maui tourists. Actually, this flatbread pizza place is a good place to unwind after returning from the rigors of Hana. Good for the entire family. The establishment prides itself on locally produced, organic ingredients and the results do not disappoint. For lunch, we had a 1/2 "coevolution," 1/2 sausage flatbread pizza that was absolutely delicious. It is baked using the local kiawe tree wood, which resembles mesquite. And the flavor is fully ingrained in the pizza, which is enhanced by local herbs. The owners represent themselves as 60's generation types who are very conscientious to the community and very aware of their environment and need to encourage local producers. The service is very welcoming, friendly and prompt. The building is old, spacious, and looks "traditional Hawaiian" with hardwood floors, dark wooden structure, and open-air vent windows that don't let in much light, but don't let in much heat either. This is an excellent choice for a stopover in Paia. And a walk around town before or after is interesting too -- a lot of small shops.
