At the time the first Maui Tacos opened on the island, they were a "breath of fresh air" in a community that was seriously lacking any good-to-great Mexican food choices. (Las Pinatas in Kahului was the lone exception.) Local "celebrity chef" Mark Ellman was the concept's creator, and guiding light, and as long as he had his fingers in the pie, the food quality was very good, and consistent. Ellman sold his interests in the chain a few years ago, and ever since the food quality has gone down, considerably down from what it once was. If you dine there now, and like it, very well, but you really should have tried it when it was good.
