This isn't just the best BBQ in Captain Cook, on The Big Island, or even in Hawai'i. This is the best BBQ I've had west of Kansas City. Melting tender pulled pork with a tasty BBQ sauce that was island-esq without crossing that line into candy sweetness. Can't speak the ribs, they were still rolling on the smoker. The brisket was also first class with just the right amount of fat cap left on and a beautiful smoke ring. Cold beer for sale right next door... yup, paradise.
A very friendly fellow working the counter was running the smoker and more than willing to talk shop. Said they used locally sourced woods like coffee tree, macadamia wood, etc... Thought that was a great twist on the traditional (and I'm sure crazy expensive to import) hickory/mequite/oak and offered just as good of a rich smokiness. Cool old home-built smokers on a pickup chassis too.
Having moved from Missouri to California some years back, I've been looking high and low on the west coast for good Que. Little did i know it was just on a different Pacific Ocean coast. Seriously guys, A+ stuff, thanks a million.
