This is an AWESOME restaurant. The service is freindly and just attentive enough. The decor is nice with burlap draping the ceiling, open bulbs and lots of mirrors. But the reason to come is the food. We'd been having horrible meals during our stay in the area and our hotel said this was the best restaurant in town. They were right.

Both the lamb and the pork chops were amazing. Delicious seasonings and perfectly cooked. Most entrees come with potato salad, which is really nice with a light mustard seasoning. We live in the NYC area, and this restaurant could easily succeed in NY.

It is "expensive" for the Pullman area with entrees about $25 each. But coming from NY, 2 entrees and 3 beers for $65 is a steal -- especially when the food is THIS GOOD.

Another bonus -- open until 10:00 pm.

“Outstanding!!”

I was leading a photo tour in the Palouse region of Washington and was getting tired of burgers and fries. The Black Cypress was an oasis in small town america. Our group ate here 3 times during our 8 days in the area. Be sure to try the bacon! It was unlike any I have ever had..

“One of the best meals I have ever had!”

Traveling for business and our hotels staff highly recommended this restaurant to us. When we walked in the place smelled so good! Bacon and herbs, yummy! The menu is a foodie's delight with off menu specials of in-season items. If you want fresh, sustainable, local, wholesome food this is the place. We started out with an appetizer of a plate of three freshly made dips tsatsiki (combination of greek yogurt, cucumber, olive oil, lemon juice, salt, pepper, dill and garlic), skordalia ( a traditional Greek garlic sauce that is made by combining crushed garlic with a hearty base of ground stale bread.), a pureed white bean dip, and grilled bread. I had a very reasonably priced and surprisingly good carafe of house white wine and my husband order a unique cocktail called an Arab Spring made of Gin, Lemon, Sugar, Cardamom Bitters, on the rocks. We shared a house salad of spinach, red onions, green apples, blue cheese, bacon, candied walnuts, topped with balsamic mustard vinaigrette. We also shared our entrees of 1/2 Roasted Chicken (so crispy, tender and perfectly seasoned!) served with bread salad, steamed kale, and fresh herb pan jus, with the second entree being one of the best Carbonara I have had. This place has a young, hip vibe to it without being snooty or pretentious. Pullman is very lucky to have such an awesome restaurant with chefs and staff that are obviously happy and care about the restaurant and the customers.

“Very enjoyable dinner”

Very friendly & helpful staff. The ribeye steak was large and cooked to perfection. It came with a generous portion of potato salad and some nicely cooked bok choi. My wife's bouillabaisse was very flavourful as well. Reasonable prices and great atmosphere. On par with Swilly's.

“About Time”

After several attempts to find a good place in Pullman we found the Black Cypress. Without a reservation we had a 30 minute wait for a table. The bartender was great. His attitude and ability were top drawer - the time flew by. The table rocked & the wait staff fixed it quickly. I mention this as the building may be old but well reconverted.

The food and service was stellar. I will go back again for the perfectly prepared lamb chops, served with a melange of roasted veg. While not cheap the value for the money was a good match.

At 9:30 pm on a Thursday there was a line waiting to get in!
