So a little background, my husband and I tried to get to Dashi one day while it was still a "noodle bar" outside. Unfortunately it was raining when we got there, and we decided on somewhere else so we didn't have to stand and get wet.. my Dashi experience would have to wait..
I work at a popular restaurant in town, and we are all big foodies. The reviews from my coworkers were mixed, so I was excited to see for myself yesterday. I popped in on a slow Friday afternoon and was greeted with a lovely decor and fresh ambiance. It felt upscale yet casual. Loved the bowling alley tables and the minimalist theme. Very clean!
Being a first timer, the menu was a bit confusing. I wished for a simple list of soups with combinations carefully chosen by a chef with ingredients that go well together. But this is not like that. Essentially its a "build your own" bowl with choice of meat, noodles, and broth. Okay, well I love pho, (LOVE pho) so I decided on something simple: chicken with rye ramen and beef pho broth. How could I go wrong?
Well... Something went wrong. First, $14 for a bowl of soup and a soda? Expensive. Given, the quality of the ingredients were obviously much higher than your local pho joint, and I never complain about paying for high quality. But dang. Okay it must be worth it I thought..
Got some yummy toppings from the bar (cilantro, lime, basil, pickeled onions), sat down and was brought my order. I was sort of taken back by the color of the broth: dark, dark cloudy brown. It was garnished with (what I thought) were some leafy fresh spinach leaves, along with some nori, and crispy chicken skin which was interesting. So my first bite had a nice spinach leaf in it, lots of noodles and some broth too.
It's safe to say that my experience until now was quite pleasent. Nice ladies behind the counter, wonderful decor and fast delivery of the food.
But wow. Those spinach leaves? Actually were (what must have been) FRESH WASABI leaves. They lit up my face like a wildfire. I couldn't even breathe. The dark cloudy broth? Salty, waaaaay too "beefy", heavy, no fresh nuances of cinnamon or cloves that real pho uses to cut the richness. The noodles were undercooked. I love fresh noodles, but these didn't seem to be cooked right, a little under. Even after doctoring my soup up with lots of fresh lime cilantro and siracha, I still couldn't eat it.
I watched 2 or 3 different employees walk by me to clean other tables, no one asked how it was or how I was doing. After about 15 minutes of me trying to eat my soup, I got up and left with 90% of it still in the bowl, and I was still hungry. Big bummer.
I work in the industry, and appreciate the high quality ingredients, and loved the decor, but it always comes down to the food for me. It really missed the bar and hopefully they can rework things in the kitchen to match their great atmosphere and clean restaurant.
My one suggestion would be to make a fixed menu with some great noodle bowls chosen by the chef, along with the "build your own".

Thank you for your recent visit to Dashi Noodle Bar and for providing some feedback in your review. I am sorry you were not completely satisfied with your soup. As you mentioned, the Dashi concept is that of a customizable Noodle experience. We offer several varieties of Noodles and Broths daily. Hopefully next time you will find a combination that suits you better.

Also, the veggie toppings in our soup do change with the season as well. The greens that you mentioned were actually local Mustard Greens and they will most likely be replaced by some other spring greens in the near future. I do apologize that you found them to be too spicy.
I would like to stress that if you are EVER unhappy with your meal at Dashi, please let our friendly and knowledgable staff know and they will happily replace your dish with something that you would prefer more. It is our goal to provide great food and customer service and to ensure that every one of our guests leaves happy and satisfied.
