I like the Cheesecake Factory. The food is good, the portions are large, the waitstaff friendly and competent, and the prices are reasonable. But why in the middle of the day, on a very busy Christmas shopping Saturday, would they only be partly staffed? There were probably 15 people in front of us waiting and we were told, a party of 5, that our wait would be at least 20 minutes. There must have been at least a dozen empty tables, clean and set up, available. But either the kitchen wasn't set up to handle more customers, or they didn't have enough servers in place to meet the needs of their customers. Once we got seated our service was reasonably prompt so I think the issue was simply that they didn't have enough servers in place to handle all of the available tables. Given that I saw several parties turn around and leave rather than wait, I think they miscalculated and it ended up costing them.
