I'd summarize by saying it's more of a diner than a true bbq place...the side items at Sibley's are pretty good...the french fries are seasoned and crispy...but both times that I've had the minced pork bbq, it has been extremely dry. It has that smoked flavor. Sauce on the table and it needed ALOT to moisten it. It's not "Carolina style" bbq...maybe it has a little vinegar base but I didn't taste it. Brock's bbq is my favorite in the Chester area, and they have a buffet, too. Was very disappointed in Sibley's potato salad. It's sour cream based with a strong dill flavor...just not what you expect at a bbq place....I'll also mention that it's small, noisy....Brock's atmosphere is much cozier, pleasant, etc.
