We visited Ruby's in April on a trip to Bryce Canyon. After driving a long way with night closing in we were glad when we finally got to Ruby's Inn (especially after driving by a few of the other motels in the area).
Our room was pretty standard for a motel - small but clean. The whole place is huge - I can imagine the crowds in the summer, but in April things were pretty slow (It was still snowing).
We ate at the restaurant because there were very few other options and both had the buffet. The meal was expensive and the food only so-so. Since there's wasn't much to do at night we poked around the gift shop and then turned in for the night.
The gift shop is large and has a good variety. Clothing and souvenirs are available as well as travel / camping / outdoors supplies. There's also a general store where we picked up some supplies for the next day. Prices were a bit inflated, but there didn't seem to be many other options.
The best part was the proximity to the park - A short drive from the front gates. Overall Ruby's isn't luxury but it would make a good home base for your outdoor adventures. Watch out for crowds in the peak summer months.
