I often travel across Texas and Oklahoma as part of my job. In doing so, I've had the occasion to have some great Mexican food at both chain restaurants and "Mom and Pop" operations. One of the dishes I judge a Mexican restaurant by is Carne Guisada, along with the "heat" and taste of the salsa. Until now, I had not found a restaurant where the carne guisada could match the standard set by a "Mom and Pop" Mexican restaurant in Abilene, TX. Well, La Vaca Loca can!
The carne guisada served by La Vaca Loca is a wonderfully spicy dish -- very favorable with a nice warm burn. Now, by "burn", I don't mean that it is too hot. I mean that it is a perfect balance of great taste with a very nice amount of "heat". I don't think it's too spicy. I think it's perfect. My only criticism is that I though the serving size was a little small. I could have done with another spoonful.
I'm also very critical of salsa. Most salsa is far too mild for my taste, or it is blazing hot with no flavor. Again, La Vaca Loca walks the thin line between great taste with a slow warming sensation, i.e., it's not immediately "hot" or "spicy" when you first taste it. The heat slowly comes and is balanced with a terrific flavor. Yeah. I like it a lot.
Lastly, I must say that the service was also very good. As of this writing, this restaurant is only 2 or 3 months old, but with food and service this good, I expect them to stay around. I know that I will be back!
