We almost didn't go in because of the sterile strip mall atmosphere but being tourists decided to give it a try rather than drive around San Marcos looking for other options, and boy were we glad we stopped.
We found out Kip knows BBQ. I got a sliced brisket sandwich. The brisket was tender and juicy with the right amount of smoke. Pork ribs are done with a dry rub and were tender and smokey. Believe I also saw chicken, sausage, turkey and ham on their menu board. Kips sauce was a little spicy and vinegary with a bit of cumin, not overly sweet or too thick, went really well with both the brisket & ribs. The coleslaw was the best, the cabbage was fresh and crunchy with a creaminess in the sauce that balanced the vinegar's tang. The potato salad was very good, slightly vinegary with a mustard base. The jalapeno cheese cornbread was tasty. The sweet potatos chunks were sweet, almost like dessert.
The counter service was friendly and willing to answer our questions. Our orders came out quickly. My sandwich w/1 side was around $6.50. The pork rib basket w/1 side & bread was around $8. Dill pickles, peppers, onions, etc were self-serve. Over-all a decent price for really decent BBQ. It's called Kips Texas BBQ & Catering, so he also sells the meat by the pound and sides by the quart or gallon. Even though the location was in a new mall area, I got the impression Kip has been preparing BBQ for years.
