My husband and I had been wanting to try Chuys for a year or so, but it has always been so crowded we waited until we were able to go for an early dinner on a weekday. It was still very crowded but were told it would only be ten minutes. We were called in about five minutes. This was a very well oiled machine in how people were seated, orders taken and served. That does not mean we felt rushed as we did not. The interior is very interesting all over. I saw the whole place as I went to the restroom which took me through another room and the bar area. It looked very nice by the way and lots of high bar tables that were immediate seating. There also is outdoor seating. The menu is very extensive so if you cannot find something to your liking you must not like this type of cuisine. I did not notice though that I could pick my sauce rather than the one that comes on your dish. Also they have two kinds of rice and two kinds of beans. My dinner came with a fresh rice with cilantro and it would be what I would have chosen. I got the refried beans which is also what I would choose. You could get a black bean version with some spice. My husband liked it better and then got the default mexican rice. I tried both of his so I would know to get what I already had. I wanted a variety so I got the enchilda combo. It was really good and way too much food but I knew I would be taking home leftovers. My husband got a steak burrito that they call bigger than your head. It was pretty close. We also sampled the on the rocks regular margarita. This always tells me whether it is a keeper or not. Very good and not watered down as most are. You could tell it was made with fresh limes rather than a mix. The drinks were on the pricey side. We thought it might be to keep people from getting too rowdy as this is a family place. Overall, the food was very good, service was excellent, wait time was excellent considering the crowd, and the price was very reasonable for the amount of food you get. It is now one of my top Mexican restaurants locally and if you know Knoxville there are many around. Worth the wait if you go at a busy time, just do not get frustrated as they do a great job of getting you seated. One other note: this is not an intimate setting. It is loud, festive and fun. Children seemed to enjoy it as well.
