The National Exemplar's recently appointed Chef Chase Blowers is no vanishing mirage in a desert of so many months now. My wife's and my dinner this week was exactly the promising the exotic date-palm oasis needed, beginning with charcuterie of blue, Spanish manchego, and mild goat's milk cheeses, aged beef, cashews in honey, prosciutto, and more. Preceding the "Duroc Pork Osso Buco" were perfect apple salad and an impossibly divine special: a light creamy carrot soup with with ginger and coriander under a cloud of just a touch of whipped cream. Don't worry, the famed Hungarian mushroom soup, perfect, but only when the paprika, onions, lemon juice, soy sauce, and dill are chef-adjusted, isn't to be retired! The pork, a nicely presented ample shank (rather than traditional 1.5-inch pieces highlighting marrow) was flavorful and as tender as possible. Accompanying grits made with Weisenberger flour were perfectly crisp, just at the surface. The desert behind us, the desserts will have to wait for another night.
