A terrific restaurant . The set menu has variety and was perfectly prepared. The service was cheerful and very professional.

“Service. What service?”

Seated at 7 o'clock. Appetizers finally set before us at 8 o'clock.
First choice of wine - advised after 10 minutes that it wasn't available.
Second choice of wine, not available either.
What kind of restaurant is this other than an expensive one?
Profuse apologies made for delays and out-of-stock wine choices.
But not one dollar deducted from the bill.
Rated two stars for slow service and lack of recognition of same.

“I so want to love his place...”

But it just ain't to be. A Monday night dining room, ten percent full. Two servers, four assistants. Seated at 7:30. Thirty minutes before beverages are delivered. (And we're talking a bottle of water here, not Maitai's from Tahiti.) An hour in, we're served appetizers. (Which, to be fair, were pretty good.) but by the time our entrees appear (on the bus tray) from the kitchen, we have been waiting an hour and forty-five minutes. It's all made worse as we watch our presumably hot dinner plates reach room temperature while the waiter chats for nearly ten minutes with an adjacent table while refilling water glasses. Perhaps resort pace cannot be compared with that of a busy restaurant in a competitive urban market. That said, this is a Fairmont and our meals weren't cheap. The waiter, somewhat defensively explained the turtle speed of our dining experience to be about a very busy kitchen. (We hadn't complained, mind you.) Perhaps there were diners elsewhere absorbing capacity, but we didn't see them. By our lights, the meal pacing issues were entirely due to breakdowns in service rhythm. And the food? Meh.

“Food should match the service”

It is a little difficult to make breakfast unique and inspiring, but it is a shame the food could not match the service at this hotel. As I can't eat wheat, there was no enjoying any pancakes that might have had some flair, but I was surprised to have what looked like packaged potatoes. Sausages were tasty, but scrambled egg was a little too seasoned. Too salty and I do not like pepper, but it was in the egg. Would be better to leave it unseasoned, or be sure you mention this to server upon ordering.
However, I appreciated being addressed by my name and given attentive experienced service. As a mid week in March, it was quiet, so only a la carte breakfast was offered. A nice touch was a fresh fruit plated with the meal including individual spoons of applesauce.

“Food is good, service could be improved”

We had the breakfast buffet at Aux Chantignoles in February 2013.

The waitress wasn't terribly friendly at first, we had to almost argue to get the table we wanted despite the fact that the restaurant was almost empty, but in the end we got it and the waitress was OK.

The food is good and fresh, and many choices. Try the crepes.

Overall had the service been better I would have given the experience 4/5...but not a 5/5 simply because it is very expensive for a self-serve breakfast buffet.
