I was born and raised in Queens, NYC. I know that you think it gives me the right to prattle on about how awesome the pizza is up north and you think if it's so great then I should just go back there. I am not getting into all of that, except to say I have been to the mountaintop, and if I say it's good, it's definitely good.
I think I love Trios most because it IS so well hidden. I only found it by accident, in all of the times I've traveled Smoky Park from Canton to AVL. I try to tell people in my town about it, and they never know where I'm talking about, making it reminiscent of one of those diamond in the rough spots from back in the city. (Lenny's on Crossbay Blvd, if you ever happen up Queens way.) The place is family owned, and the folks who work their who aren't in "the family" are very friendly and accommodating.
Regarding the pizza: The crust has the right amount of pull too it, and isn't too doughy or bready. There is even a bit of char to it if it's cooked just long enough, which gives it the authentic flavor you want. They are generous with their cheese, and you can tell they use quality product. The real winner here is the sauce. It's slow cooked, and has a great flavor. I always like a side of sauce for additional dipping. My favorite combination of toppings so far is to start with a regular cheese pie, add sundried tomatoes, artichoke hearts, and fresh mozzarella.
Regarding everything else: The calzones are decent, and HUGE. The "NY Style" pasta dishes, prepared with ricotta as only a good yankee would do, are great. The only weakness I have found so far is their chicken parm. I've tried it on a hero, and it was chunked up and not at all what I think of in a chicken parm hero. But that was long ago, and I'll just suspend my disbelief and tell myself they've surely solved that problem by now.
If you're anywhere near Candler/West Asheville and want to try something new, try Trios. I promise you won't be disappointed.
